That pickled garlic juice in the dressing is such a smart touch, it gives a mellow punch without being harsh. I love how you balance sour, salty, sweet, and heat after such a busy morning of caring for your mom and sending your daughter off. Do you soak the glass noodles in room temp or warm water for the best chew? I’m stealing this for dinner and will try not to finish it before serving.

Room temp makes sense and keeps the noodles nice and bouncy. How long do you soak them before blanching? I usually do around 10 to 15 minutes, then a very quick dip in hot water to avoid mush.
