Introducing "Giniling na Baboy" - A Popular Dish of Small Restaurants around the Philippines (Cooked in Wood)

Greetings!

Here is a dish that is commonly seen in small restaurants in my country, the Philippines. Small restaurants are also known as Karinderya or Carenderia in my country. Sometimes, some people in my country call small restaurants as Turo-Turo where customers literally point to the dish that they want to eat or buy for taking home.

Back to Giniling na Baboy, I first tasted this simple and delicious dish when I was in college (that was in the late 1990's). Looking at the dish, it looks like just a normal dish because you can only see carrots, potatoes, and ground pork in the dish.

At first, I did not even bother to taste it because its ingredients and very familiar and I thought it is not delicious. But when I tasted it, I immediately fell in love with it because it is very delicious.

And from then on, I regularly eat this dish, and I also cook it for my family whenever I got to do cook. The ingredients are very simple, carrots, potatoes, tomato sauce, salt, onion, garlic, and black ground pepper.

This dish is also very versatile, you can eat it on its own, you can partner it with rice, you can put some cheese on top bake it and you got a baked Giniling na Baboy (very much recommended, your friends and visitor will definitely love it). Also, you can make it in a sandwich, most of all, you can make it spicy and a little sweet by adding a small amount of sugar.

So, without further ado, here's how I cook this very delicious dish...

  • Ground Pork (500 grams)
  • Potato (250 grams or more)
  • Carrot (150 grams or more)
  • Onion
  • Garlic
  • Tomato Sauce (90 grams)
  • Salt
  • Ground pepper

Peel and slice the potatoes into cubes (you can definitely make it a little bigger but not too big)

Peel and slice the carrots into cubes (you can definitely make it bigger but not too big)

Peel and slice the onions

Peel and slice the garlic

Prepare the ground pork

1. Sautee the onion and the garlic in cooking oil

2. Add the ground pork

3. Add the ground pepper, carrot, and the potato

4. Stir to mix them well

5. Add all the content of the tomato sauce

6. Stir to spread the tomato sauce, add some salt, then let it boil, when all the ingredients are cooked and the taste is now okay it is done...

I have not tested it before but all the ingredients are readily available here I will give it a try by cooking it because I might not see where to buy and eat. Am a lover of sweet potatoes so am sure am going to enjoy it.
