Staff Meal Dinner 20/6/2025: Ginger Scallion Beef & Kangkung Belacan
Before service, I whipped up a quick yet satisfying staff dinner of ginger and scallion beef stir-fry paired with a delicious, spicy side of kangkung belacan. It was a well-loved combo that brought together familiar flavors, a bit of heat, and just the right amount of comfort before the busy night ahead.
The beef was sliced thin and marinated briefly, then stir-fried with fragrant ginger and scallions until just tender. The ginger gave it a sharp, warming kick while the scallions added a fresh, savory edge. A splash of light soy and a touch of sesame oil tied it all together—simple, clean, one of my favorite dishes to have with rice.
To go alongside it, I made kangkung belacan—water spinach stir-fried over high heat with a punchy sambal made from shrimp paste, chilies, and garlic. It was slightly spicy, smoky, and the perfect foil to the beef’s mellow richness.
Together with steamed rice, it was a meal that hit all the right notes: quick to make, big on flavor, and energizing enough to fuel the team through a full dinner service.
