FOODlog #1372: Pulled Noodles with Chili Garlic Peanut Sauce

There’s something deeply satisfying about a bowl of noodles that hits every note—spicy, savory, nutty, and rich. Made my signature la mien for our staff supper the other day and it's just that: a comforting yet bold dish built on a flavor-packed sauce mix of garlic and chili oil, creamy peanut butter, soy sauce, and oyster sauce. The noodles are coated generously in this umami-laden base, each slurp bursting with depth and warmth.

For the toppings, I layer mine with textures and flavors that complement each other perfectly. Slices of crispy fried fish cake add bite, while tender poached chicken breast brings in clean protein. Braised shiitake mushrooms lend their earthy richness, kangkung (water spinach) offers a vibrant crunch, and a perfectly cooked 63°C onsen egg crowns the bowl—its silky yolk ready to melt into the sauce, binding it all together.

It’s a dish that feels indulgent yet grounded, familiar yet exciting. This la mien isn’t just a meal—it’s an experience I always come back to. My kind of comfort food that's super delicious and satisfying!
