I like cucumber soup, but never tried it with miso; will have to try this sometime! There's also cucumber sandwiches, with a bit of mayo, cream cheese spread, or Ranch Dressing on the bread! Thinly-sliced cucumber is also a delightful addition to 'sushi-style' veggie rolls with carrot & avocado! Your soup looks yummy! 😋
