Potato Salad with Meat and Beets\Kartoffelsalat mit Fleisch und Roter Bete

Today we'll be cooking a variation of Potato Salad. This version includes boiled ham, sausage (optional), boiled beets, carrots, and potatoes, pickles (a must!), and boiled green peas. And to really get everyone going, we'll add some fresh apple slices. Sacrilege!! But at least the salad will be dressed with mayonnaise. We'll keep things simple here, but we'll add some table mustard to the mayonnaise. Let's go, it'll be a salad!

Ingredients:
● Potatoes - 8 pcs
● Boneless ham - 500 g
● Carrots - 2 pcs
● Beetroot - 1 pc (large)
● Cooked sausage - 150 g (optional)
● Apples - 1 pc
● Frozen green peas (+cooking) - 400 g
● Pickled cucumbers - 5 pcs
● Mayonnaise - 400 g +
● Mustard - 1 tsp, to taste
● Salt, black pepper, herbs - to taste

1.The vegetables need to be pre-cooked. I washed the potatoes, carrots, and beets to remove any dirt, placed them in a bowl with a glass of water, and microwaved them for 20 minutes at 800 watts. Check the beets for doneness; they may not be fully cooked in 20 minutes and may need additional cooking time. Let the vegetables cool, peel, and dice. Peel and core the apples and dice them. Dice the pickled (not marinated!) cucumbers as well. Immediately add some mayonnaise and mustard to prevent the vegetables from browning.

2.Boil the boneless ham pieces with the bay leaf in salted water. This usually takes 1 hour. Let the meat cool and cut into pieces, trimming off any excess fat. Add the meat to the salad. I also chopped up the leftover cooked sausage; I didn't want to waste it. Instead of traditional canned peas, I used frozen peas and boiled them. There's a problem with peas these days—either they came from Uncle Liao's stash or they're using old-fashioned stock, but the peas were oaky. Blanching regular green peas would have been enough, but I boiled these for half an hour and they weren't quite done yet—a paradox. Basically, use canned marrow peas and don't create unnecessary problems for yourself. I let the peas cool and added them to the salad.

3.Add the remaining mayonnaise, salt, black pepper, and mustard to taste. The beets gave the salad a beautiful pink color. It's worth putting the bowl with the salad in the refrigerator for a few hours so the mayonnaise will better infuse the ingredients.

Heute machen wir eine Variante des klassischen Kartoffelsalats. Diese Version enthält gekochten Schinken, Wurst (optional), gekochte Rote Bete, Karotten und Kartoffeln, Essiggurken (unbedingt!) und gekochte Erbsen. Und um den Appetit so richtig anzuregen, geben wir noch frische Apfelscheiben dazu. Sakrileg! Aber immerhin wird der Salat mit Mayonnaise angemacht. Wir halten es hier einfach, geben aber noch etwas Senf in die Mayonnaise. Los geht's, es wird ein leckerer Salat!

Zutaten:
● Kartoffeln – 8 Stück
● Schinken ohne Knochen – 500 g
● Karotten – 2 Stück
● Rote Bete – 1 Stück (groß)
● Gekochte Wurst – 150 g (optional)
● Apfel – 1 Stück
● Tiefgefrorene Erbsen (zzgl. Kochzeit) – 400 g
● Gewürzgurken – 5 Stück
● Mayonnaise – 400 g +
● Senf – 1 TL, nach Geschmack
● Salz, schwarzer Pfeffer, Kräuter – nach Geschmack

1.Das Gemüse muss vorgegart werden. Ich habe die Kartoffeln, Karotten und die Rote Bete gewaschen, um eventuellen Schmutz zu entfernen, sie in eine Schüssel mit einem Glas Wasser gegeben und 20 Minuten bei 800 Watt in der Mikrowelle gegart. Prüfen Sie, ob die Rote Bete gar ist; sie ist möglicherweise nach 20 Minuten noch nicht durchgegart und benötigt eventuell etwas mehr Garzeit. Das Gemüse abkühlen lassen, schälen und würfeln. Die Äpfel schälen, entkernen und würfeln. Die eingelegten (nicht marinierten!) Gurken ebenfalls würfeln. Sofort etwas Mayonnaise und Senf hinzufügen, damit das Gemüse nicht braun wird.

2.Die Schinkenstücke ohne Knochen mit dem Lorbeerblatt in Salzwasser kochen. Das dauert normalerweise eine Stunde. Das Fleisch abkühlen lassen, in Stücke schneiden und überschüssiges Fett entfernen. Das Fleisch zum Salat geben. Ich habe auch die übrig gebliebene gekochte Wurst klein geschnitten; ich wollte sie nicht wegwerfen. Anstelle von Erbsen aus der Dose habe ich Tiefkühlerbsen verwendet und gekocht. Es gibt heutzutage ein Problem mit Erbsen – entweder stammen sie aus Onkel Liaos Vorrat oder es wird altmodische Brühe verwendet, aber die Erbsen hatten einen Eichengeschmack. Normale grüne Erbsen zu blanchieren hätte genügt, aber ich habe sie eine halbe Stunde gekocht und sie waren immer noch nicht ganz gar – ein Paradoxon. Verwenden Sie am besten Markerbsen aus der Dose und machen Sie sich keine unnötigen Probleme. Ich habe die Erbsen abkühlen lassen und sie dann zum Salat gegeben.

3.Die restliche Mayonnaise, Salz, schwarzen Pfeffer und Senf nach Geschmack hinzufügen. Die Rote Bete hat dem Salat eine schöne rosa Farbe verliehen. Es lohnt sich, die Schüssel mit dem Salat für ein paar Stunden in den Kühlschrank zu stellen, damit die Mayonnaise die Aromen besser aufnehmen kann.

4.Den Kartoffelsalat mit gekochtem Fleisch und Roter Bete auf Tellern anrichten und den Geschmack und die Farbe genießen. Ein herrlicher Salat! Kartoffelsalat hat uns noch nie enttäuscht!
