Dropping the first 22 lbs. seemed almost effortless, yet the past two weeks I just keep fluctuating up and down 2-3 lbs. I have a decent sized salad for lunch and a smaller one for dinner with my meal.

I cut up a package of firm Tofu into chunks after squeezing out the excess water. I added some onion and garlic powder, salt and pepper, along with a little Soy Sauce. The last thing was adding 2 T. of Cornstarch for the coating and a little Sesame seed, then frying the cubes in Avocado oil.

Once they were crispy on all sides, I drained them on a paper towel to cool. This is the first time every frying Tofu, so I was excited to see how it turned out.

I was surprised at how much I liked the fried Tofu mixed in with my salad. I will certainly be buying more to use more often.

For dinner I baked chicken thighs in the oven covered with my homemade Salsa Verde from the pantry. Add a little Mexican cheese on top and that was a super simple meal.

I've started adding a little more carbs to my main meal and the white rice paired nicely with the Verde Chicken.
I am going to do another 3-day round with just eating an avocado and a tin of Sardines for each meal to do a reset and see if that will kickstart the weight dropping once again.

I have a goal of 25 more lbs. to rid of buy my birthday in July. Even more would be absolutely wonderful too! I already notice how much better I feel and am positive I will be even more so reaching my goals.
