Weight Loss has Stalled but Still Doing Keto-Low Carb - by Sunscape

Dropping the first 22 lbs. seemed almost effortless, yet the past two weeks I just keep fluctuating up and down 2-3 lbs. I have a decent sized salad for lunch and a smaller one for dinner with my meal.

I cut up a package of firm Tofu into chunks after squeezing out the excess water. I added some onion and garlic powder, salt and pepper, along with a little Soy Sauce. The last thing was adding 2 T. of Cornstarch for the coating and a little Sesame seed, then frying the cubes in Avocado oil.

Once they were crispy on all sides, I drained them on a paper towel to cool. This is the first time every frying Tofu, so I was excited to see how it turned out.

I was surprised at how much I liked the fried Tofu mixed in with my salad. I will certainly be buying more to use more often.

For dinner I baked chicken thighs in the oven covered with my homemade Salsa Verde from the pantry. Add a little Mexican cheese on top and that was a super simple meal.

I've started adding a little more carbs to my main meal and the white rice paired nicely with the Verde Chicken.

I am going to do another 3-day round with just eating an avocado and a tin of Sardines for each meal to do a reset and see if that will kickstart the weight dropping once again.

I have a goal of 25 more lbs. to rid of buy my birthday in July. Even more would be absolutely wonderful too! I already notice how much better I feel and am positive I will be even more so reaching my goals.

I have only eaten tofu once or twice, and was not impressed. Did your method of preparing it produce tasty results? My husband likes sardines; I do not. I consider you a brave soul to eat that many of them.

I am not on a diet, so it's going great. I have been put on so many weird diets over the years, diets that were supposed to solve health issues but didn't, that I have quite lost interest in diets. Maybe some day that will change. Not sure.

It had been years since I tried tofu and never was a huge fan and then I saw an Asian cook fry it. Well, that made all the difference, and it wasn't bad. This is only my third time doing a diet my entire life, once after having babies and now at 70 ridding myself of excess weight.

Wow! That’s quite impressive to be able to lose so much weight. Your recipe looks very delicious and nutricious. I doubt if I have the will power to be on such keto diets. I am sure you could achieve your goal and eat yummy food at the same tim

It has been interesting eating a Keto diet, I do have rice and potatoes occasionally with dinner, but a small amount. I have more weight to rid myself of and am going to push through until I do. Nice to hear from you and I hope your life is peaceful and fulfilling.

It's the carbs sneaking in that's stalled you, I bet. But you will work it out and I bet you lose most of the rest, seeing as the gardens are opening up again.

I know it is the carbs but dang it's hard not having some from time to time. I guess I'm going to have to get serious again. All the snow has melted and another 65° day today. Yay!
