Onion cake for Eid al-Fitr celebrations

Onion cake is a very very familiar dry cake in my area, especially when Eid al-Fitr arrives, a few days ago when I was about to celebrate Eid al-Fitr I had the chance to make this onion cake, why is this onion cake called onion cake because this onion cake is slightly larger than the onion cake in general, this onion cake is also made differently from ordinary onion cakes, this onion cake uses 2 types of flour, the first is wheat flour then tapioca flour, both flours are mixed into a super creamy dough

This onion cake is usually served to guests when Eid arrives and besides that this onion cake is very suitable to be eaten with lontong, yes lontong is a type of ketupat with various sauces, beef rendang, chicken opor, fried noodles and tauco which are always present in our house when Eid al-Fitr celebrations arrive, lontong is almost the same as ketupat, both are made from white rice then boiled until solid and can be cut into small pieces then eaten with coconut milk sauce, chicken rendang, fried noodle sticks and tauco and with the addition of this onion cake makes lontong even more delicious when eaten

Apart from that, onion cakes are also very suitable as a snack for ourselves when the guests have gone home, hehe

Sitting relaxed in the living room or in the TV room while enjoying ebabwang cake with super fresh ice syrup seems really great, especially in super hot weather like now.

Materials used

500 grams coconut milk
1 head of garlic
200 grams shrimp
1 stalk celery
500 grams tapioca flour
500 grams wheat flour
Salt to taste
Flavoring to taste

Previously, I had ground the shrimp and garlic into the coconut milk and cooked it for about 10 minutes. Don't forget, I also added the celery leaves.After the coconut milk has cooled, I sprinkle it little by little into the flour mixture.

First, I mixed the two flours together, then I added salt and flavoring, then I stirred until evenly mixed.

Next, I sprinkled the coconut milk sauce little by little into the flour mixture and kneaded the flour until it was smooth.

After the flour can be shaped, I take a little flour and I roll it using AMPIA, I roll it until it is thin like this

After that, I continued to fry it in a lot of hot oil, I fried it until it was golden brown and the onion cake was ready to be served.

and this is the result after it cools down, I put it in a jar to serve to guests when Eid al-Fitr arrives, this onion cake is very crispy and savory, the taste of the shrimp is also very pronounced, besides being savory and crunchy, this onion cake is also very creamy because it contains thick coconut milk which is cooked until cooked.
