
Hi bloggers and food lovers! Today I’m making some fluffy, jiggly pancakes, they have a soft texture and a sweet taste, and they’re easy to make. You can top them with whatever you like. This time, I’m making fluffy pancakes topped with ice cream. Okay, let’s get started!
Ingredients:
- 2 eggs
- 3 tbsp granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp cream of tartar
- 3 tbsp all-purpose flour
- 1 tbsp cornstarch
- 1/2 tsp baking powder
- 7 tbsp milk
- vanilla ice cream for topping
Instructions:


- Crack 2 eggs and separate the whites from the yolks



- Add the vanilla extract and milk


- Whisk the egg yolks until pale


- Add the all-purpose flour, cornstarch, and baking powder to the egg yolks


Stir until well combined and a batter forms
Set aside

- Take a bowl containing the egg whites, then add cream of tartar and 1 tbsp sugar

- Beat the egg whites with mixer on high speed


- While beating, gradually add the sugar until the egg whites form soft peaks


- Gently fold a small amount of the egg whites into the yolk batter

- Fold the batter until well combined

- Add the egg white and yolk mixture to the remaining egg whites


- Gently fold the mixture again


- Once thoroughly combined, transfer the pancake batter to a piping bag

- Heat a pan and lightly grease it with oil

- Pipe the pancake batter onto the pan and add a little water around the edges of the pancake

Cook the pancake over the lowest heat setting
Continue until all the batter is used up




- Once all the batter is used up, top the fluffy pancakes with vanilla ice cream and sprinkle matcha powder on top


- The fluffy pancakes are ready to eat
