I'll take this opportunity to copy your recipe to make this gluten free version any time soon. I make gnocchi rarely because they're a bit of work, but at home my husband and I are gnocchi lovers. I once made them with baked ripe plantain dough and they're also firm and delicious, but in this case, I'd have to see how they turn out by replacing the flour with cornstarch and adjusting the recipe.
