In this post I will be sharing with you how to make porridge/pottage using sweet potatoes. Porridge/pottage is a popular meal in Nigeria and it is undoubtedly eaten by most tribes in Nigeria and across Africa. But just before we continue with the recipe there is an existing argument about whether it should be called pottage or porridge.
Porridge is a name most of us grew up accustomed to and pottage looks/sound weird in our hearings. Even though the words are often used interchangeably by quite a number of people, the dictionary meaning says that pottage is a thick stew made up of different vegetables, grains, fish, meat etc while porridge is a watery cereal-like breakfast dish. So, for the sake of this post I shall be using the two terms simultaneously.
So, pottage or porridge in Nigeria parlance can be in different forms, in other words, you can make your pottage or porridge using yam, sweet potatoes, plantain. We also have a beans recipe we call porridge/pottage beans. Also, these pottage or porridge can be tweaked in one way or the other. That is, some add palm oil, some don't. Some add meat, smoked or fresh fish, crayfish, and so on. A correct pottage or porridge is not done if it does not include any leafy green of choice like spinach, ugwu, etc.
Today's recipe is made using sweet potato which has to be cut into eatable sizes and cooked until it is tender and cooked in a mix of pepper mix, onions and palm oil.
Ingredients
- 6 -8 sweet potatoes

- 3-5 tomatoes

- 3 scotch peppers

- 1 onion

- 1 dry catfish

- 2 seasoning cubes
- ⅓ cup palm oil
- Indian spinach

- Water
- Salt
Step by Step
- We shall start the cooking process by prepping everything we will be using so as to make the cooking easy and less stressful and to also ensure no ingredients is left unused.

- Begin with the washing and peeling of the main ingredients which is sweet potatoes. Then cut it into small sizes and set aside.
- Next, wash your scotch bonnet peppers, tomatoes and onions and blend roughly.
This will serve as the base of your porridge. Set aside. - Wash the indian spinach and cut into thin sizes.


- Next, debone the dry cat fish and wash it and set aside as well.

- Next, place a pot on medium heat and add your already washed sweet potatoes, add some water and allow to cook until it is tender. This should take between 8 to 15 minutes depending on the quantity and the size.




- Next, check if the potatoes are tender then pour in the blended pepper mix and allow to cook for about 5 minutes before you season it to your taste.

- Next, add your deboned catfish into the pot and toss in your palm oil. Then cover the pot for about 5 minutes and allow all to simmer together.


- Now you can use your spoon to mash about 20% to 30% of the potatoes to have that creamy feel.
- Finally add your sliced indian spinach and turn off the heat.

- Your meal is ready.

- Serve and enjoy.
