My Version of Filipino Style Mapo Tofu

Are you craving for some Chinese dish...? If you are, well, I am too, especially my daughter @tegoshei. I had been planning to cook this dish for a long time, but I couldn't get some of the specific ingredients needed. So that was being skipped for some months. However, yesterday, I decided to cook this in a Pinoy style, or Filipino style version, so it's easier for me to buy the ingredients.

Let's take a look at how I cooked my version of "Filipino Style Mapo Tofu . I was so lucky yesterday because I had a special assistant and photographer. Heheh

Well, my daughter was free from work yesterday, actually, she couldn't work because there was some construction at home. We are fixing our fence and some rotten roof outside the house. It's located in our extended, dirty kitchen, and Max's haven during the daytime. So, she volunteered to help me again in my cooking by doing the photographs and cutting or slicing some of the ingredients.

My Version of Filipino Style Mapo Tofu



INGREDIENTS:

  • Tofu
  • Ground Pork
  • Onion
  • Garlic
  • Spring Onion
  • Bell Pepper
  • Sweet Chili Sauce
  • Soy Sauce
  • Liquid Seasoning
  • Pork Cube
  • Salt
  • Fermented Black Beans
  • Powder Seasoning from Ramyun
  • Canola Oil
  • Water
  • Slurry


PREPARATION:

Wash the ground pork thoroughly, then strain and drain.
Slightly wash the tofu, then cut it into cubes.
Peel and wash onions, then cut into small pieces.
Crush and peel the garlic, then cut it into smaller pieces.
Wash the spring onion, then cut it into separate green and white parts.
Wash the bell pepper, remove the seeds, and then cut it into slightly larger sizes.
Set all the ingredients aside.

COOKING TIME:

Boil some water in a pot or pan. When it starts to boil, add 1 tablespoon of salt, then add the sliced tofu. Boil them for just about five minutes. Then remove the tofu and transfer them to a clean plate. Then set aside the water from the boiled tofu.


Let's continue cooking!
Heat just a small amount of canola oil in a pan or cooker, then add the ground pork. Sauté until the water from the ground pork evaporates.


When it starts to evaporate, season it with ground black pepper and garlic powder. Stir and mix them well until slightly browned.

Push the pork to the sides and then add canola oil to the center of the pan. Sauté the onions, garlic, and white spring onion. You can also add ginger if you prefer, as it will enhance the flavor and aroma.

Sauté the aromatics for a few seconds, then combine them with the pork and sauté for a few minutes.

Then season with soy sauce and Knorr liquid seasoning. Then add the bell pepper, stir, and mix.


Then add the boiled tofu, stir, and mix them slowly and carefully.

Then add the sweet chili sauce and then add water (water from boiled tofu). Cover the pan and let it simmer for a few minutes.

Then add a pork cube and the ramyun powder seasoning. Let it simmer again until the water has reduced. Then add the fermented black beans and a little of the slurry. Then cover again and continue cooking for about five minutes.



And this is it, ready for plating!

Sprinkle with some green spring onions and serve while it's still hot. It pairs well with brown rice. Although this is my first time cooking this, I'm glad with the result.

My daughter and husband were pleased, and they praised the dish for being so tasty. We also shared the food with the carpenters who fixed our fence yesterday, and they were so happy with it. What a happy tummy again... hehehe🥰
