Hey guys,
I just know this: there's no single family in this world to not have a busy, stresful or a full day.
And when this happens, we tend to become anxious about what we cook or what our kids will eat that day.
If I know ahead that I'm going to have a busy day, then this is the recipe I make for Caleb. The good thing is this recipe can be adjusted.
This means you can use whatever veggies you have in the fridge, you can replace chicken with beef or sausages or even replace pasta with rice.
I prefer pasta over rice every time, however, rice will do too if you dont have pasta .

Ingredients:
There are just a few ingredients to make this recipe. Feel free to replace some of them or add more veggie ingredients if you want.
- chicken
- fusilli pasta (or other pasta)
- olive oil
- salt and pepper
- oregano, basil or Italian seasoning
Veggies - mushrooms
- zuchini
- onion
- baby carrots
- asparagus
I usually add red bell pepper. I love them in this recipe but this time I didnt have any in the fridge. See?? Told ya, this recipe is adjustable! ❤️



Instructions
Add olive oil in a pan. Start frying the chicken. Add salt, pepper and herbs: oregano, thyme, basil. You can add a bit of paprika too.
When it's done, set aside.

In the same pan, add veggies and saute them until nice and tender.
Add salt and pepper according to your own taste.



Meanwhile the veggies are cooking, boil the pasta according to its package instructions and time.
When pasta is completely boiled, add them on top of veggies, add chicken too and mix everything until well combined.
Add more seasoning if needed.

I personally love this recipe.
Simple. Nutritious. Healthy. Comfort food. Full of Veggies. Delicious.

So what do you think? It's a 30 minutes to make recipe, but this is not all. The juicy meat and the veggies make it just perfect for kids and the whole family actually.
It keeps you full for hours and in the same time, it's kind of fresh.
Another cool thing is that you can make it ahead of time and serve it cold. I do thaaaat! I eat it cold the next day,everytime, if there are leftovers. 😁😆
