Deep-fried items such as fried chicken, pork chop, lechon kawali, and crispy pata are usually present on the Filipino family table, especially during special occasions. Fried chicken is always present at our kids' birthdays, this is one of every kid's favorites.
One downside of these fried items is that when they are left in the fridge for a day, as leftovers. They became soggy and no longer crisp foodstuffs that you either have to reheat or toss away.
Today, I will share one of my leftover recipes. My partner usually calls me the leftover fairy and says, "Because in your kitchen, leftovers matter." As long as these leftovers are not yet spoiled, and were kept safely inside the fridge, we can transform or use them into something more interesting food stuff.
This recipe is the same as the common pancit guisado recipe we always know, the thing is it's not about the recipe itself but on how we make use of leftovers incorporated into this recipe.
Recipe: Super Meaty Pancit Guisado
Cooking time: 20 to 25 minutes
Serving: 3 to 4 pax
What we need?:
Chunks of leftover fried chicken and fried pork (you can use as much as you want)
Fresh chicken meat cuts (optional, I use this because I felt the leftovers I have are not enough for a more meaty meal)
180 grams of Pancit Canton Noodle
A small piece of cabbage sliced into strips
A piece of bell pepper
6 cloves of garlic
1 small onion bulb
a teaspoon of ground black pepper
a pinch of salt
2 tablespoons of soy sauce
a small pack of instant seasoning
a tablespoon of cooking oil
spring onions (optional)
a cup of water
meatballs, siomai, any meaty leftovers you have in the fridge can be used in this recipe (optional)
The most exciting part is here, let us go to my small kitchen and let's cook our super meaty Pancit Canton Guisado.
Preparation:
Step 1: In a heated pan, put a tablespoon of cooking oil and saute the minced garlic and onions. When the garlic turns golden brown, first cook the fresh meat if you are also using some fresh meat cuts. Then add your instant seasoning mix and ground black pepper.
Step 2: Cover the pan, let the fresh meat cook properly for 7 to 10 minutes. When the meat is already well done, add the leftovers: fried chicken chunks, fried pork chunks, meatballs, siomai, and other meaty fried stuff leftovers, if you have these additional. Mix everything.
Step 3: After a couple of minutes of stirring and mixing, add the soy sauce and a cup of water and let it boil.
Step 4: Add the dried pancit canton noodles, the cabbage, bell pepper, and spring onion strips. Mix and stir thoroughly over a low fire.
Step 5: Turn off the fire and serve and enjoy our Super Meaty Pancit Guisado.
