Mommy F asked me to buy carrots in the market as she's planning to make carrot juice. She's experiencing a severe pain in her legs again and they are moving from different joint into others and so she wants to make some. Not sure where'd she get the idea that carrot juice is helpful for arthritis but well, i'm surely sure she stumble upon it accidentally either on Facebook or YouTube.


I didn't help Mom with the process because she only used two medium sized carrots, she manually grated it and squeeze it to get the juice. Now, before she make that carrot juice, she already planned to make carrot omelette. She's also craving for it I think that when she asked me to buy the carrots, she mentioned that she wants me to make carrot omelette later. I just said yes even though I don't really know how, lol. Its actually Mommy D who usually make this but she's not feeling well that time so the role was given to me (≧▽≦). But well, it's just like making omelette so I'll just make it the omelette way. UwU


So this is what we need, the grated Carrots, two small onions, two cloves of garlic, two medium eggs, salt, ground pepper and ¼ cut of chicken cubes. The plan is to not put flour in it because Mom doesn't like it. If it's Mommy D who make it, she'll surely put flour on her version because that can make this crispier. Although we like it crispy, but there are times that we don't want any flour in our foods. But then, I had no choice this time, this kind of recipe really need a flour on it lol. So Yeah, we also need three tablespoon of flour.




First thing first, let's beat the two egg, put salt, pepper and for the chicken cube, I dissolve it first to the hot water. Mommy D doesn't use this but I feel like mixing some in there. Lol. You can actually just skip it if you want and replace it with Magic Sarap or whatever seasonings you have there.


Next us mixing the garlic in it and finally the grated carrots. Mommy F didn't squeeze the carrots too much so it is not that dry which I think is just right. And we'll mix mix mix it until they're well combined.




I mix it thoroughly and put three tablespoon of flour, I added them gradually, checking if it's already too much. There's really no measurement here, I just add what's necessary and what I think is needed for it




After some mixing, you can see it, the right consistency for it. Its not too watery anymore so this can be fry now.




Next is preparing the pan, heat it and once heated put the oil and wait for it to heat up again. Then we'll get the carrot mixture, I used a spoon to scoop the mixture and flatten it for it to be cook faster.


After 2 minutes and 30 second or when I saw it turing into beautiful brown, I flip it and cook the other side for the same time.




And it's done! So easy no? Cooking it more easier because I flatten it. Mom actually requested it to be flatten, she wants it to be fully cook and not to slimy inside. Some recipe is like that when using a flour, they become too slimy inside, like the inside is uncooked or something.
