It's actually a good way to be more mindful of what you're eating - you have to read the ingredient list for everything! I think the modern wheat varieties have been selected for higher yields, pest resistance, and baking qualities and some people say these changes may have altered the protein structure of gluten which makes it harder to digest. Then there's higher gluten content in modern processed food. A lot of people say to improve your gut biome and that helps, or have good sourdough bread with good flour. Good luck - be interested to see if you feel better.

Oh ya for sure! I read 99% of the ingredient labels and only stop when we have products that we know we like. I probably drive my wife nuts because I say we can't buy this or that because the ingredients are crap haha.

Gluten free is a really important step especially living in America. There's so much crap sprayed on our food it's horrible and the wheat is far from what it's supposed to be, and ends up pushing more compounds than it's supposed to.

Since I’ve cut out 95% of the gluten I’ve lost 6 pounds! My inflammation is way down which is awesome. I also feel less tired so it’s really awesome so far! We’ve been doing it more actively for the last 4 weeks. Looking forward to how it goes in the next 6 months.
