Cada vez que llega el mes de agosto, busco crear un postre inspirado en mi mamá. Ella falleció hace unos años ya y cuando llega su fecha de cumpleaños, busco crear un postre inspirado en ella y en las cosas que le gustaban. Esta vez tardé un poco más, ya que el ingrediente protagonista es el higo, un fruto que cosecho de mi jardín y que fue una planta que sembró mi mamá hace muchos años y hoy es un emblema en casa.
Every time August rolls around, I try to create a dessert inspired by my mom. She passed away a few years ago now, and when her birthday comes around, I try to create a dessert inspired by her and the things she loved. This time it took me a little longer, since the star ingredient is the fig—a fruit I harvest from my garden, from a tree my mom planted many years ago that has become a symbol of our home.

Mi madre fue mi mentora de pastelería y por eso ahora busco honrarla creando preparaciones únicas que representen lo que a ella le gustaba y disfrutaba en vida. Resulta que mi higuera es bifera; eso quiere decir que da brevas e higos. Las brevas son higos menos dulces y más grandes, entonces aproveché que se está terminando la temporada de brevas y está comenzando la de higos, para utilizar ambos en un postre.
My mother was my mentor in baking, and that’s why I now seek to honor her by creating unique recipes that reflect what she loved and enjoyed during her lifetime. It turns out that my fig tree is a bifera variety; that means it produces both brevas and figs. Brevas are less sweet and larger than regular figs, so I took advantage of the fact that the breva season is ending and the fig season is beginning to use both in a dessert.


Teniendo en mente los higos y brevas, pensaba en otros elementos que a ella le gustaban y recordé que le gustaba un dulce típico de los Andes venezolanos que es la mezcla de dulce de leche con higo. Otros sabores que le gustaban a mi mamá eran el del anís estrellado y la vainilla sarrapia. Teniendo esos elementos presentes, comencé a trabajar ideas hasta que construí un postre que no me queda duda de que a ella le gustaría.
With figs and early-ripening figs in mind, I thought about other things she liked and remembered that she enjoyed a traditional dessert from the Venezuelan Andes—a mixture of dulce de leche and figs. Other flavors my mom liked were star anise and sarrapia vanilla. With those elements in mind, I began brainstorming ideas until I created a dessert that I have no doubt she would love.

Esta tarta tiene una base preparada con la masa de la pastafrola, una de mis masas favoritas y la de ella, aromatizada con anísestrellado. Seguido a eso, una capa de dulce de leche criollo; es un dulce de leche firme o duro. Luego viene una capa de jalea de brevas con limón, para que sea un dulce ácido. Seguido viene una capa de jalea dulce de higos. La textura de la pastafrola, el dulce de leche y cada jalea, combinaba muy bien.
This cake has a crust made with pastafrola dough—one of my favorite doughs and hers as well—flavored with star anise. Next comes a layer of criollo dulce de leche—a firm or hard type of dulce de leche. Then comes a layer of fig jelly with lemon, to add a tangy sweetness. This is followed by a layer of sweet fig jelly. The texture of the pastafrola, the dulce de leche, and each layer of jelly all went together very well.


Para la decoración, utilicé merengue italiano, ya que fue el primer merengue que mi madre me enseñó, y lo aromatizé con vainilla sarrapia. Coloque anís estrellado e higos rebanados y confitados, para agregar texturas, sabores y elementos visuales que mostraran al comensal de qué sabor es la tarta. La jalea de higos, busqué que fuera con higos maduros para aprovechar un color rojo que se produce por la piel morada y el relleno rosa, más una pizca de ácido.
For the decoration, I used Italian meringue—since it was the first meringue my mother taught me to make—and flavored it with Sarrapia vanilla. I added star anise and sliced, candied figs to incorporate textures, flavors, and visual elements that would give diners a hint of the cake’s flavor. For the fig jelly, I made sure to use ripe figs to take advantage of the red color produced by the purple skin and pink flesh, plus a hint of tartness.

La verdad, quedé encantado con el resultado. Sé que esta tarta será del gusto de mi mamá y la hubiese disfrutado. Gracias a ella tengo buenas bases de pastelería y decidí estudiarla profesionalmente. Así que cada cumpleaños y hasta que tenga vida, haré un postre que honre su memoria y los sabores que a ella le gustaban. ¡Feliz cumpleaños, mamá!
To be honest, I was thrilled with the result. I know my mom would have loved this cake and would have enjoyed it. Thanks to her, I have a solid foundation in baking, and I decided to study it professionally. So every birthday—and for as long as I live—I’ll make a dessert that honors her memory and the flavors she loved. Happy birthday, Mom!
