Today I'm sharing a recipe for a nutritious snack: Tostones with eggplant cream. It's perfect for an afternoon snack or to share with family and friends. It's made with just a few ingredients and doesn't take much time. For best results, use green or tender plantains to get a crispy texture when frying. Here's how to make it.

Hoy les comparto la preparación de un nutritivo snack; Tostones con crema de berenjena, ideal para merendar o compartir con las visitas de familiares y amigos, se prepara con pocos ingredientes y no requiere de mucho tiempo, para prepararlo es recomendable utilizar el plátano verde o tierno, para obtener un toque crocante al freírlo, les muestro el proceso de elaboración.

Chili pepper (1)
Salt to taste
Oil (enough for frying)

PROCEDURE

Once the ingredients were organized, the first step was to wash them with plenty of water and vinegar. Since the eggplant takes the longest to cook, I placed it on a griddle and cooked it for 20 minutes over medium heat. I pricked it with a fork on the sides to ensure even cooking, then turned it over and checked if it was cooked through. I removed it from the heat and let it cool before scooping out the pulp.

I placed them on a board and, using a mallet, crushed them. I added salt, returned them to the pan, and fried them for about 10 seconds to brown them and allow the salt to adhere. I removed them and placed them on a paper towel to absorb the excess oil.

This cream does not require water since the eggplant contains enough. I added salt and placed the mixture in a container. With these simple steps, a nutritious snack is ready.

Pasados aproximadamente 10 minutos retiré la pulpa de la berenjena con ayuda de una cucharilla, luego agregué en la licuadora el ají, los ajos, la pulpa de berenjena y licué a velocidad alta, hasta obtener una mezcla homogénea y espesa, esta crema no requiere agua ya que la berenjena contiene, agregué sal y coloqué la mezcla en un envase, con estos sencillos pasos está terminada un nutritivo snack.
