Katwa is a recipe that is the most traditional food in my village. If I talk about the traditional foods or cultural foods of my village, then Katwa is one of these foods. Katwa was made in clay pots in the past and Katwa is the name of the pot that is made of clay and then food is cooked in it. But now the tradition of clay pots is dying out and now the pots that are being used are steel or iron pots. So today I will tell you all how to make Katwa Beef. I will make this Katwa Beef in the traditional way and this traditional method is very simple and very easy. But when you cook Beef Katwa according to the method I have told you, you will be licking your fingers because its taste and aroma are so good. It will be delicious and you will remember it for the rest of your life, so I am going to share with you all the recipe of the beef katwa I made today.

Here I want to tell you one more thing that you can cook the recipe of katwa with beef, mutton and even with desi chicken, but the condition is that you have to cook it in the desi style, not using too many spices, but using very simple ingredients that are usually available in every kitchen. So, I am going to share with you all the recipe and method of how I have cooked beef katwa. This method is our traditional and desi method and this method has been followed for thousands of years and all the great chefs who cook katwa cook katwa in the same way and it turns out very delicious. If you want to serve special katwa to your guests, then you have to follow the tips and method I have given you. So let's go and let me tell you how I made this delicious and mouth-watering recipe called Beef Katwa. What is cooking and what is the complete method of cooking it?

The ingredients required to cook beef cutlet are described as follows:

  • Beef,
  • tomatoes,
  • ginger,
  • garlic,
  • onion,
  • salt,
  • red Kashmiri chili green chili chopped - cooking oil,
  • green chilies,
  • coriander powder,
  • ginger powder and chopped beef,kashmir grammsla
  • water.

There are some important things that I have to tell you about beef. Beef should be from an animal that is one and a half or two years old. If you are using meat from an older animal, then you will need more time for it because when you cook the meat of an old animal, then it will take time for the meat to decompose. And you will have to use more water to decompose the meat. So if you are making a recipe for one kilo of beef, then you will need two to three liters of water and one cup of cooking oil or ghee. Similarly, you will need half a kilo of tomatoes and five teaspoons of ginger and garlic. Both of these ingredients should be mixed. Salt should be used according to taste. Similarly, Kashmiri red chili should also be used according to taste. All the other ingredients should be used according to taste. If you want to eat more spicy beef cutlets, then you will have to add red Kashmiri red chili and hot spices in large quantities to make it spicy. These were some of the things that I mentioned. I had to tell you here, now let's go and see how to make this recipe and I will tell you step by step from start to finish.

Another important thing is that you have to cook the beef cutlet on a wood fire because the beef cutlet cooked on a wood fire is very delicious compared to the one cooked on gas, so you have to light the wood fire and you have to cook this beef cutlet on it. First of all, we lit the wood fire. Before lighting the fire, we made a brick stove and we lit the stove with wood fire. After lighting the fire, I poured five liters of water into the pot and then added a little five teaspoons of salt to the water. When the water boiled well, I put the beef in this boiling hot water, just as you can see in the picture that I am putting the beef in the hot water. When you put the beef in the hot water, then you have to cook this meat on a high flame for about 20 to 25 minutes. During this time, you do not add any ingredients to it, you only use the water that is hot. Add the meat and cook it for 20 minutes.

When the meat is boiled in hot water for 20 minutes, after that you have to add the onions which will be chopped into small pieces. Now you have to cook the meat and onions in water for another 20 minutes so that the onions become soft in the water and the meat also comes close to being cooked. Thus, the total time will be 40 minutes. Thus, when the 20 minutes have passed, after 20 minutes you have to add other ingredients which I am showing you in the pictures and you can see how after adding the onions, I have cooked the meat and onions well in the water. They are cooked well. Now you are adding other ingredients to them.

You can see in the pictures how beautifully I am making the beef katwa recipe with my friends. It is always more fun to cook with friends because when we cook a meal together, its taste becomes more beautiful and delicious. Because during cooking, the love of friends is added to the food. After 40 minutes, now we have added red Kashmiri chili powder, coriander powder, ginger, garlic, salt to taste and Kashmiri katwa biryani powder, hot spices to the onion and beef meat. When we add all these ingredients, you will see that the color of the meat will become very beautiful and after adding all these spicy ingredients, we have to cover the pot with a lid and for about 10 to 15 minutes, we have not removed the lid of the pot. After 15 minutes, when we lift the pot, a very beautiful aroma will spread and that aroma will be a sign that the recipe that is being prepared is becoming very delicious. When we remove the lid after 15 minutes, we have to stir it well with a spoon so that after stirring it well, we will cover the pot again and when we cover the pot again, then after another five to ten minutes, we have to remove the lid and let it cook. We have to continue this process until the water we added has dried up by three parts.

While adding the ingredients, one thing to keep in mind is that you should add salt, red chili and the rest of the spices in the same quantity as you like. You should add the spicy spices in the same quantity as per your taste. If you want to make it more spicy, then you should increase the quantity of spicy spices. But it is up to you to decide how much you want to keep the taste of the salt, red chili and the rest of the ingredients. Similarly, when the water dries up more than half, then you should not cover the pot or tie it because if you cover the pot, there will be a fear that the recipe that is being prepared will not burn from the bottom. If it burns from the bottom, then its taste will become bitter. So when the water dries up more than half, three-fourths, you should take it off the fire, turn off the stove and reduce the fire of the wood. Similarly, when the water dries up to three parts, it means that your recipe is completely ready. If the meat is from a large animal or an older animal, then you also have to check whether the meat is cooked or not. If the meat does not cook, then you have to add more water to it at the same time and then you have to dry the water that you have added. When it dries up, your meat will be completely cooked and your recipe will be completely ready. Thus, you have to remove it from the fire.
