Good evening to all my friends who love good food. I hope you had a wonderful weekend and were able to enjoy it with your loved ones. Welcome to my blog!
Like every Sunday, today after church we went to my mother’s house to prepare lunch to share as a family. My mother had soaked the black beans ahead of time—they were one of the items on today’s menu—since, as we know, beans take quite a while to soften.
So, when we’re going to cook them, we usually prepare them ahead of time. We also made shredded chicken and served it with white rice—a very simple but delicious meal.

700 gr de pechuga de pollo
1 kilo de arroz
1 cebolla
ajo
ajíes
cilantro
cebollín
700 gr de caraotas negras
aceite
onoto
azúcar
sal
comino
adobo.
700 grams of chicken breast
1 kilo of rice
1 onion
garlic
chili peppers
cilantro
scallions
700 grams of black beans
oil
annatto
sugar
salt
cumin
seasoning mix.

To prepare the chicken, the first thing we do is wash it thoroughly with water and vinegar, drain it, and bring it to a boil with a little salt until it’s completely cooked. Then we remove it from the heat, let it cool slightly, and shred it with a fork; This process is actually quite simple and quick, since chicken is very tender, unlike beef, which can sometimes be a bit more difficult to handle.
Next, after thoroughly washing all the seasonings, peel the onion, remove the seeds from the chili pepper, cut everything into small cubes, and sauté them in heated oil. Once they’re sautéed, remove them from the heat, take half and set it aside, and use the other half to add to the chicken we’ve already shredded. Mix everything together well, then adjust the seasoning by adding cumin, salt, and adobo.

To prepare the beans, as I mentioned at the beginning, my mom had already softened them before going to church, so when it was time to start making lunch, we simply turned the heat back on. I added a sprig of cilantro—which I always like to add whole—and also added half of the seasoning mixture we’d sautéed earlier to prepare the chicken. We tasted it, added cumin to the beans—which is an essential seasoning here in town—added a little salt, and finally added sugar because black beans undeniably go with sugar, hahaha.
