Si hablamos de camote Ipomoea batatas, en Perú existen más de 10 variedades y se siguen sacando más variedades. Pero, los más consumidos con el camote morado y el amarillo (Jonathan). El morado lo comemos sancochado y el amarillo frito.
El camote es una planta decumbente (rastrera). Lo puedes reconocer en campo, por el color y forma de sus hojas. Siendo, los colores claros para camotes amarillos a blancos y los verdes oscuros a púrpuras para los morados.
