A comforting Creole celery cream [Eng-Esp]

A cream of creole celery soup comforts the body and cheer. It is very easy to prepare and requires few ingredients.

Una crema de apio criollo reconforta el cuerpo y el ánimo. Es muy fácil de preparar y requiere pocos ingredientes.

It is ideal for a light dinner or as a starter for lunch. Of course, you can leave it more liquid or quite thick, as in my case, where it almost looks like a purée. With that consistency, it is also ideal for serving to children as a pap and encouraging them to eat vegetables.

With its distinctive slightly sweet flavor, Creole celery, also known as arracacha or white carrot, is an ideal ingredient for a delicious, nutritious cream with a smooth, very pleasant texture.

Es ideal para una cena ligera o para la entrada de un almuerzo, por supuesto se puede dejar más líquida o bastante espesa como en mi caso que casi parece puré. Con esa consistencia también es ideal para servir a los niños como papilla e incentivarlos a comer vegetales.

Con su peculiar sabor ligeramente dulce, el apio criollo, arracacha o zanahoria blanca como también se le conoce, es un ingrediente ideal para una crema deliciosa, nutritiva y de textura suave, muy agradable.

Ingredients for 1 serving:

  • 2 medium creole celery.
  • Half an onion.
  • 1 sprig of cilantro.
  • 1 sweet pepper.
  • 2 cups of water.
  • Salt to taste.
  • A dash of oil.

Ingredientes para 1 ración:

  • 2 apios criollos medianos.
  • Media cebolla.
  • 1 ramita de cilantro.
  • 1 ají dulce.
  • 2 tazas de agua.
  • Sal al gusto.
  • Un chorrito de aceite.

Preparation // Preparación:

I peeled the creole celery, washed it, cut it into pieces, and put it to cook in 2 cups of water with a teaspoon of salt and the chili pepper without the seeds.

Pelé los apios criollos, los lavé y corté en trozos y los puse a cocinar en las 2 tazas de agua junto a una cucharadita de sal y el ají sin las semillas.

When it began to boil, I lowered the heat a little and covered the pot until they were soft, which took about 20 minutes. I turned off the heat and added the previously washed sprig of cilantro, covering it so that the flavor would concentrate.

Meanwhile, I sliced the onion into thin rings and sautéed them in a little oil until they were lightly browned.

I added the already cooked pieces of celery and stirred to integrate.

Cuando comenzó a hervir, bajé un poco el fuego y tapé la olla hasta que estuvieron blandos, esto fue luego de unos 20 minutos aproximadamente. Apagué el fuego y agregué la ramita de cilantro previamente lavada, tape para que se concentrará el sabor.

Mientras, corté la cebolla en ruedas finas y las sofreí en un chorrito de aceite hasta que estuvieron ligeramente doradas.

Agregué los trozos de apio criollo ya cocidos y removí para integrar.

I blended the little bit of water left over from cooking with the sweet pepper, the sprig of cilantro, and the pieces of celery soaked in the sautéed onion.

Licué el poquito de agua que quedó de la cocción junto al ají, la ramita de cilantro y los trozos de apio criollo impregnados con la cebolla sofrita.

Serve my comforting cream with croutons and a little more cilantro.

Definitely a perfect option for preparing this delicious and nutritious root vegetable.
