Hope you are having a wonderful mid-week, enjoying good health and getting into the spirit of the season as we count down into the holidays.

I can’t tell you how happy 😃 I am because this season usually is my best time of the year, knowing that we have made it to the end despite all odds. And again, celebrating Christmas holidays 🥳 with our loved 🥰 ones is one greatest achievement.

And with this in mind I have continued to experiment with foods since the season calls for new recipes that we should bring to the dining table which is why I made this exquisite combination of chickpea with rice and potatoes into curry to cuisine to share with you.

This SUPERV EASY One-Pot Vegan Chickpea , Rice and Potato Curry is about to blow your mind. An exquisite meal with tons of nutrition from vegetables, spices and carbs you must not miss out during this coming holidays. I use to make potato curry but this time I decided to add rice to potato with some fresh chickpea, ginger for spice and some mint leaves 🍃 for those nice aroma.

This meal looks traditional and continental at the same time. Serve it as a lunch cuisine or little potions for light dinner with its delicious warmness curry finishing. A recipe you will love 💕.

Lets make this exquisite and delicious cuisine with a step by step process.

INGREDIENTS:

1/2 cup of long grain rice (per boiled) 2 medium potatoes 1/2 cup chickpea ( per boiled) 2 large cherry tomatoes 1 long chili pepper Couple of mint leaves 1/4 thumb size of ginger Single leave of uzuza (spicy) 2 red hot peppers 1/2 teaspoon of dry thyme herb 1 teaspoon of curry powder 10 ml of vegetable oil 3/4 teaspoon of salt

STEPS FOR PREPARATION:

Step 1.

The first thing we will do is to wash and slice the mint leaves, tomatoes, hot pepper, chili and the uzuza leave. As here above.

Step 2.

We cut 1/4 ginger, peel and crush above.

Step 3.

We cut , peel and cut our potatoes into cubes.

Wash and soak for about 10 minutes to remove some starch.

Next, we take the potatoes into a cooking pan, add water , cover and place it on the cooker.

Once it boils, we add our per boiled rice, stir together and cover to cook properly.

Once it cooks, we add the chickpea to incorporate above.

Step 6.

In a minute, we add the chopped tomatoes, chili and hot peppers and and stir to incorporate.

And add the ginger, mint and uzuza here above . Stir properly.

Step 7.

We lower heat, allow the tomatoes 🍅 to sauce into the meal, before we add the curry, the salt, thyme herb and vegetable oil.

Finally stir gently to incorporate all . Set it down in a minute and serve.

What an exquisite delicious chickpea curry dish . Grab your deepest , largest pan or pot this Christmas holidays and make this recipe. All you need do is cook the rice a little (half way), and then add your potatoes and chickpeas in to simmer along with it. Then add other ingredients in a while.

I like really soft chickpeas in my dishes, and in this curry simmering them with the rice helps a lot. You can decide to use what ever potatoes you like, but sweet makes it taste more delicious and best.

No puedo expresar lo feliz que estoy 😃 porque esta época suele ser la mejor del año para mí, sabiendo que hemos llegado al final a pesar de todas las adversidades. Y, una vez más, celebrar las fiestas navideñas 🥳 con nuestros seres queridos 🥰 es uno de los mayores logros.

Y con esto en mente, he seguido experimentando con alimentos, ya que la temporada requiere nuevas recetas que debemos llevar a la mesa, por lo que he creado esta exquisita combinación de garbanzos con arroz y patatas en curry para compartir con ustedes.

Este curry vegano de garbanzos, arroz y patatas en una sola olla, SUPERFÁCIL de preparar, te va a dejar boquiabierto. Una comida exquisita con un montón de nutrientes procedentes de verduras, especias y carbohidratos que no te puedes perder durante las próximas fiestas. Suelo preparar curry de patatas, pero esta vez he decidido añadir arroz a las patatas con garbanzos frescos, jengibre para darle un toque picante y unas hojas de menta 🍃 para darle un aroma agradable.

1/2 taza de arroz de grano largo (hervido) 2 patatas medianas 1/2 taza de garbanzos (hervidos) 2 tomates cherry grandes 1 chile largo Unas hojas de menta 1/4 de pulgar de jengibre Una hoja de uzuza (picante) 2 chiles rojos picantes 1/2 cucharadita de tomillo seco 1 cucharadita de curry en polvo 10 ml de aceite vegetal 3/4 cucharadita de sal

PASOS PARA LA PREPARACIÓN:

Lo primero que haremos es lavar y cortar las hojas de menta, los tomates, el pimiento picante, el chile y la hoja de uzuza. Como se muestra arriba.

Cortamos 1/4 de jengibre, lo pelamos y lo trituramos.

Paso 3.

Cortamos, pelamos y cortamos nuestras patatas en cubos.

Lavar y remojar durante unos 10 minutos para eliminar parte del almidón.

A continuación, ponemos las patatas en una cacerola, añadimos agua , tapamos y colocamos en la cocina.

En un minuto, añadimos los tomates picados, el chile y los pimientos picantes y removemos para mezclarlo todo.

Y añadimos el jengibre, la menta y el uzuza aquí arriba. Removemos bien.

Bajamos el fuego, dejamos que los tomates 🍅 se conviertan en salsa antes de añadir el curry, la sal, el tomillo y el aceite vegetal.

Por último, remueve suavemente para mezclar todo. Déjalo reposar un minuto y sírvelo.

¡Qué exquisito y delicioso plato de curry de garbanzos! Este fin de semana, saca tu sartén o olla más grande y profunda y prepara esta receta. Solo tienes que cocer un poco el arroz (hasta que esté medio hecho) y luego añadir las patatas y los garbanzos para que se cocinen a fuego lento junto con él.
