What did I do? I used a bunch of the Red Onions I grew and decided to make "Maple Onion Jam". This is the first time I've made this recipe and it is so tasty.
Maple Onion Jam

8 c diced sweet onions, about 8 lb
2 Tb butter
1/2 c brown sugar
1/3 c apple cider vinegar
1/3 c balsamic vinegar
2 Tb real maple syrup
1 teaspoon cinnamon
1 teaspoon salt
This is an easy recipe; peeling the onions took a while but the end result was worth the effort. I halved the recipe since this was the first time making it.
After chopping up enough onions for 4 cups it was time to add them to a kettle with the butter. Cook them on low heat for 2-3 hours until soft and golden.
Once they are done it is time to add all the other ingredients. Bring it to a low simmer and cook until the jam thickens.
I used these small 4 oz jars for the jam. I felt that would be the perfect amount to add to whatever meat dish I decide to use it on. I think it would be great on hamburgers, meatloaf, and perhaps steak.
Once I had another round of tomato sauce out of the canner, I put the 6 jars of Maple Onion Jam in and processed it in boiling water for 10 minutes.
Without a doubt, I will be having one of these jars of jam on a hamburger this weekend. I will have to pick up some fresh corn on the cob to go with it. Show me what you have been preserving from your garden this week, I would love to know.
