Gloomy Month but Getting Creative with My Foods!




Hello! How's everyone here? I'm finally getting the spark to check Hive again after months. Hee hee!

Life's been quite monotonous but alright. I went back to visit some old hobbies I've neglected for months and even years, perhaps. Oh, how I missed my little life that simply being in my own tiny world was more than enough to make me happy and content.

Before I get any more dramatic here, I hope anyone here from the island of Luzon are safe from the typhoons and southwest monsoon. It's a whole month of gloom. I love the weather, however, it's been also a month since I did my laundry. Lol. I wish for the sun to come out and floods to recede soon!

As usual, let me share some foods I had this gloomy month.





Story time!

Since the roads going to the mall I usually shop to was flooded, I had no choice but to shop on a nearby mall. It didn't have all the stuff I need that I even have to go to the wet market to purchase vegetables and fruits because the ones sold on the supermarket didn't look fresh and were sold for a steep price.

I have to be creative to make a meal out of the ingredients I had while also making sure I'm able to stretch these meals for more days because of the uncertainty of weather and flood.





First, is the avocado burger. The avocados I bought from the wet market were so good that I wish I bought more. Here in my country, avocados are usually eaten as a dessert with condensed milk. I sometimes put it on a toasted bread with scrambled eggs and bacon for breakfast, however, I couldn't find any loaf bread on the grocery so I went for what's available. The burger buns somehow still felt the same and I actually had fun preparing my meal, even naming it avocado burger. Lol. I also didn't have bacon. It's okay but it tastes better with it.





I finally was able to cook the salmon belly burried in ice in the freezer for months. I used it for my sinigang (sour soup). The funny thing is that I forgot to purchase most ingredients for this soup. I was only able to remember kangkong (water spinach) and tomatoes. It's still good anyways.





And since I still have lots of water spinach left, I also made some adobong kangkong. It's my first time cooking water spinach into adobo and I guess it turned out alright because it still tasted edible for me. Haha. I also added some slices of pork meat and some tomatoes and lots of garlic.





Speaking of pork meat, I also made pork adobo. A meal that's quite a regular on my monthly menu.





Due to the cool weather, it's a no-brainer to cook some sopas. I felt bad that I also forgot to buy some chicken breast so here we go with just a boiled egg. Good thing I bought a pack of frozen vegetables (carrots and corn kernels). I was supposed to use it for fried rice but use it for this instead.





Last would be the classic champorado or chocolate porridge! I remember walking at the aisles of the grocery and was approached twice by the same woman asking me where I got the chocolate porridge. Seems like it's so in demand on this weather!
