
Hello, happy Friday afternoon to all of you! Today I started adding a new dessert to my small business, and to have some variety, I decided to make cupcakes. Of course, they had to be chocolate, so I wouldn't break with tradition 🤭. Cupcakes are a great option for enjoying the flavor of tray cakes but at a more affordable price. I really enjoyed including them, so adding this new dessert is a great idea, and the best part is that they're chocolate—no one will be able to resist them! I started by making a fluffy mixture with the egg whites, then I separated the whites from the yolks, and then I put the whites into a cup and started preparing this mixture until it became fluffy.

Next, I made the sugar and butter mixture—400 grams of sugar, because the rest is for later—and the butter, and mixed it all well. Then I added the egg white mixture and stirred it, but not too much. After that, I added the egg yolks and vanilla and continued mixing, but little by little so as not to lose volume.

At this stage, place the flour, cocoa, and baking powder in a sieve to sift and prevent lumps, and at the same time add the milk and coffee to make the chocolate mixture darker and slightly bitter.

Once I had the cupcake batter ready, I arranged the cupcake liners in the cupcake pan, and then added the batter to each one, leaving a border so they wouldn't overflow while baking. I placed them in the oven at medium heat for about 5-6 minutes.

Once the cupcakes were baked, I let them cool. While they were cooling, I started making the topping. I put the cornstarch, the remaining sugar, the milk, and the cocoa powder in a saucepan and stirred over low heat until it thickened. Then I spread the chocolate topping on each cupcake and sprinkled it with chocolate chips.
