How's your cooking going? Anything new and delicious on the menu? Or just the usual everyday dishes?
Here, we are already deep into the joyful month of December, which means that various celebrations and parties have begun, at work, with friends, the streets of towns are already decorated, and even though it is very cold, people are coming out. Hot drinks are being consumed, accompanied by various sweets.

So I decided to try to make a dessert, something traditional, sweet, fruity, and delicious – pears cooked in red wine.

This dessert is more for adults because it contains alcohol. In Slovenia, it is prepared in winter as a dessert for festive lunches or dinners. The dessert is particularly popular in wine-growing regions and is probably of French origin. It was first served at the tables of townspeople and the wealthy, but in the 20th century, it became popular everywhere.
It's effortless to prepare and tastes divine.

It has only three basic ingredients - pears, wine, and sugar. Everything else is up to the chef's imagination.

For three servings of this dessert, you will need:

  • 3 medium-sized pears
  • half a liter of red wine (we use RefoΕ‘k or Teran, as these give the pears the best color)
  • 5-6 tablespoons of sugar
  • spices (you can improvise here; I was minimalist for the first time, using only vanilla essence and lemon juice, but you can also add cinnamon, cloves, and similar flavors)
  • you can also add some cream or ice cream.

It is very easy to prepare, anyone can make it, there are no strict rules, and it always turns out well.

First, wash the pears.

Then peel and halve them, remove the seeds, and leave the stems on. You can also sprinkle them with lemon juice to prevent oxidation. (But this won't be noticeable later anyway).

Pour about half a liter of wine into a pot, or less if you prefer, then add some water. Start heating it, then add 5-6 heaped tablespoons of sugar. Or, if you prefer, you can add more to reduce acidity.
I usually replace half of the sugar with another natural, calorie-free sweetener, preferably erythritol, which is made by fermenting corn starch, is similarly sweet, and looks like sugar.

When the sugar has dissolved and the wine is already heated, add the pears. Then add the spices we prepared: 2 teaspoons of vanilla essence and one teaspoon of lemon juice. Of course, you can add more spices. Some people add cinnamon, cloves, ginger, or allspice.
As desired, ensure no single spice dominates.

Let the pears boil for about 20 to 30 minutes, depending on how soft they are. If they are smooth, cook them for less time; if they are hard, boil them for longer.
When are they cooked? When you can easily pierce the thickest part of the pear with a knife or toothpick, but it still holds its shape.

When the pears are cooked, remove them and let them cool.

While the pears are cooling, let the wine boil for a while longer until it reduces to a syrup, which we will pour over the dessert. About ten minutes. The longer it reduces, the thicker the syrup will be.

Everything is ready!
Now all that's left to do is serve. Place the pears on a plate and add a scoop of vanilla ice cream, whipped cream, or both as a side dish. Finally, pour the wine syrup over the top.
