Hello again Foodies Bee Hive Community! How are you all doing today? The weather today was rainy and we want to have some snack that was hot and delicious at the same time.
This recipe that I’m going to share to you is a sweet delicacy that was really enjoyed especially this rainy season. A snack that was cooked in coconut milk and with fruits like bananas and sweet potato. This delicacy was also close to my heart because it reminds me of my childhood days especially when we celebrated new year, it became a tradition because the elderly says that this food is a sign of luck for a prosperous new year. So, join me in my humble kitchen as I show to you how I cooked this food recipe.
Ingredients:
- 250 grams of glutinous rice flour
- 300 ml coconut milk
- 1 cup of brown sugar
- 3 pcs. banana
- ¼ kg. sweet potatoes
Preparation:
Gradually add water on glutinous rice flour until the texture becomes clay like, then shape it in small circles, then set aside. I prefer to shape this in a small circle because later on the size will be doubled when cooked.
Next, is to cut the bananas and sweet potatoes into cubes. You can also add fruits like jackfruit to this recipe, but it’s not available right now in my kitchen so I just added bananas and sweet potatoes.
Now that all ingredients are prepared, let’s proceed in cooking this sweet delicacy.
Cooking time:
In a casserole add 500 ml of water and the coconut milk. Then set the fire into low medium heat.
When it was already boiling add the sugar, bananas and sweet potatoes. Mix then cover and cooked for 3 minutes.
Then add the sticky rice balls and cooked until it becomes soft.
Lastly when the sticky rice balls are already floating. Taste then add more sugar, depends on how sweet you want your snack is. But for me it’s already good.
Then we have it my very own sticky rice balls cooked in coconut milk. Best serve when hot! I really enjoyed this snack for today since the weather here is a little cold and my kids also love it 😊. You can add also sago for this recipe but it’s not available right now on my kitchen so I just cooked it without the sago but still it tastes good.
