Today my in this blog I will share with you guys a new recipe.
Last time I shared the recipe of Rustic Yogurt Chicken Masala, I am happy you all liked my recipe and gave me great feedback.
Today I am going to share with you guys the recipe of Bharwa Karela.


Ingredients

  • Bitter Gourds ( 500 grams )
  • Oil ( 1 cup or for fry)
  • Onion ( 300 grams )
  • Tomato ( 200 grams )
  • Tamarind sauce ( 2 sp )
  • Salt & Turmeric ( according to taste )
  • Ground red chili & Chili flexes ( according to taste )
  • Hot spice ( 1 sp )
  • Green Chillies ( 3 )

Process

Since I have Sundays off from college, I usually make some new recipe on Sundays and share it with you guys.
So, let me quickly tell you how to make this recipe step by step.

I scraped the top layer of the bitter gourd and then salted them in separate pots.
Left them for about half an hour so that the salt could remove their bitterness.

Now I washed them well, dried the bitter gourds with the help of a cloth and squeezed the scraped bits well.
I cut the bitter gourds in the middle and removed the seeds from inside them.

Now it was time to make the masala for the filling.
So for that I poured cooking oil into a pot and then added scraped bits to it and fried them well.
When they turned brown, I added onions to it.

Then I added tomatoes and ground spices to it, which included salt, turmeric, chili flakes and crushed red chili.
After that, I added finely chopped green chillies to it and cooked it.

Now I added tamarind sauce to it and after cooking for some time I sprinkled hot spices on it.
So this is my filling masala is completely ready now it's time to fill the bitter gourds.

For this, I filled the bitter gourds with this filling masala.
And wrapped a thread over it so that the filling does not come out while frying.

Now I heated cooking oil in a pan. When the oil was hot, I put the filled bitter gourds in the hot oil to fry.
I fried them on a normal flame and when they turned brown, I took them out of the oil with the help of a sieve.

So now I've removed the thread from them, so here are my stuffed bitter gourds ready.

The texture looks beautifully crisp while the masala inside appears juicy and full of flavor — a complete homemade desi masterpiece that looks both comforting and restaurant-worthy.


Final Look:

These crispy stuffed karelas are the perfect example of how traditional cooking can turn simple ingredients into something truly special.
The golden fried exterior, flavorful onion-tomato filling, green chillies, and even the perfectly cooked scraped karela shavings blended inside the stuffing make every bite rich, smoky, and deeply satisfying.

Yes, of course I also fry it and then make a cury of it, but it is also made this way and this dish is very traditional here, meaning it is very much liked in most homes. 😊
