Pumpkin curry is a simple yet nutritious dish that brings together natural sweetness, mild spices, and comforting flavors. Made with fresh pumpkin and traditional ingredients, this curry is a favorite in many households due to its soft texture and soothing taste. Materials Used.
Pumpkin 300g .
A finely chopped onion.
A little chopped garlic.
A piece of cut Pandan leaves.
Curry leaves.
2 chopped green chilies.
1/2 teaspoon of Chopped ginger.
About 2 to 3 cinnamon sticks.
1/2 Teaspoon of turmeric powder.
1/2 Teaspoon of chili powder.
1/2 Teaspoon of Mustard seed.
1/2 Teaspoon of fenugreek Seed.
1 Teaspoon of curry powder.
1 Cup of coconut milk.
Some water.
1 Teaspoon of sugar.
Salt to taste.
1 Teaspoon of Roasted curry powder.
2 Tablespoon of coconut oil.

The cooking process as follows.
Now, let’s get ready to prepare the curry.First, cut the pumpkin into pieces as follows, wash and clean them.
Next, take a pan and place it on the stove. Add about 2 tablespoons of coconut oil. Once the oil is heated, add onions, garlic, ginger, green chilies, cinnamon, mustard seeds, fenugreek seeds, and pandan leaves. Mix well and allow them to sauté lightly until fragrant.
Now add turmeric powder, chili powder, curry powder, chopped pumpkin, roasted curry powder, and half a cup of water. Stir well and let it cook for about 3 minutes.
Next, add the coconut milk along with sugar and salt, mix well, and cook for a few more minutes. Then remove from the heat.
