Acehnese Recipe for "Caluk Noodles with Peanut Sauce"

Hello friends of the foodie community... it's great to be back with another post. I hope you all have a great day.

In this post, I'd like to share a dish about Acehnese Mie Lidi with Peanut Sauce. This dish is essentially made from stick noodles mixed with peanut sauce.

Mie Lidi is a type of noodle made from sago, giving it a chewy texture when boiled. Unboiled, it has a dry texture and is crispy when fried.

It's called stick noodles, aptly named because of its flat, rectangular shape and elongated shape, like a stick. These noodles are very easy to prepare into delicious dishes, especially in Indonesian cuisine.

In Aceh, these stick noodles are usually sold in the morning at food stalls selling foods like lontong (rice cakes). They are sold with peanut sauce, commonly called "Mie Caluk."

These noodles are often sought after for breakfast. Besides being affordable, they also taste delicious. The combination of Acehnese noodle spices and peanut sauce always whets the appetite.

I'd like to share this recipe with you, a recipe my wife makes at home. I hope you enjoy it and try it at home.

This is my wife's recipe for "mie caluk." To make this dish, we use two types of spices, which are prepared separately: one for the noodles, and the other for the peanut sauce.

Ingredients and seasonings for stir-fried noodles:

  • 500 grams of stick noodles
  • Red chilies to taste
  • Bird's eye chilies to taste
  • 5 shallots
  • 2 cloves of garlic
  • 5 candlenuts
  • Spring onions
  • Tomatoes
  • Cabbage To taste

Ingredients for peanut sauce:

  • 150 grams of fried peanuts
  • 2 bird's eye chilies
  • 3 red chilies
  • 4 candlenuts
  • Galangal To taste

First, we have to boil the stick noodles. Here's how to boil them: :

  • Heat water in a saucepan
  • ⁠Add all the stick noodles
  • ⁠Pour in enough cooking oil to cover the noodles It doesn't stick.
  • ⁠Cover and let it boil.
  • ⁠Once it boils and the noodles are soft, remove from heat and drain.

How to make peanut sauce :

  • Fry all the spices: peanuts, candlenuts, red chilies, and galangal.
  • Once cooked, remove from heat and Drain.
  • Add enough water and blend.
  • Once smooth, stir-fry.
  • Season with: 1 tsp salt, 1 tsp sugar, 1 tbsp sweet soy sauce, and flavoring to taste.
  • A little lime juice.
  • Cook until boiling and the water has reduced slightly.

  • Prepare a frying pan on the stovetop
  • ⁠Add cooking oil to taste
  • ⁠Sauté the ground spices
  • ⁠Add the cabbage, then cover briefly
  • ⁠Add 2 tsp of salt, 1 tsp of sugar, and seasoning to taste
  • ⁠Once the cabbage is slightly wilted, add the boiled noodles
  • ⁠Add the chopped spring onions and tomatoes
  • ⁠Stir until evenly distributed and the spices are absorbed

Once everything is ready, the stick noodles in peanut sauce are ready to eat. The chewy texture of the noodles, combined with the Acehnese noodle seasoning and peanut sauce, is delicious. The combination of chewy, dense, and slightly spicy flavors, combined with the fat and savory flavors of the peanut sauce.

Pada postingan kali ini saya ingin berbagi postingan tentang masakan Mie Lidi Bumbu Kacang Khas Aceh. Makanan ini pada dasarnya terbuat dari mie lidi dengan campuran bumbu kacang.

Mie lidi merupakan salah satu jenis mie yang terbuat dari sagu, sehingga teksturnya tampak kenyal saat direbus. Sedangkan jika belum direbus, mie ini memiliki tekstur yang kering dan renyah jika digoreng.

Tak salah disebut sebagai mie lidi, karena bentuknya yang pipih persegi dan memanjang seperti lidi. Mie ini sangat mudah untuk diolah menjadi masakan yang sedap, terutama dalam jenis kuliner masakan Indonesia.

Jika di Aceh, mie lidi ini biasanya dijual pada saat pagi hari dibeberapa warung yang menjual makanan seperti lontong. Mie lidi dijual dengan dicampur bumbu kacang, biasanya disebut dengan istilah "Mie Caluk".

Mie ini memang sering diminati sebagai sarapan pagi, selain harga yang terjangkau, rasanya juga lezat. Biasanya paduan bumbu mie aceh dan campuran adonan bumbu kacang menang selalu menggugah selera kita.

Pada kesempatan ini saya ingin berbagi resep masakan ini kepada anda, ini merupakan hasil dari masakan istri saya di rumah. Semoga resep ini dapat kamu nikmati dan praktikkan dirumah.

Inilah resep "mie caluk" yang dibuat oleh istri saya. Untuk membuat masakan ini kita memiliki 2 jenis bumbu yang diolah secara terpisah, pertama bumbu untuk masakan mie, kedua adalah bumbu untuk olahan campuran saus kacang.

Bahan dan bumbu olahan untuk tumis mie :

  • Mie lidi 500 gram
  • Cabai merah sesuai selera
  • Cabai rawit sesuai selera
  • Bawang merah 5 butir
  • Bawang putih 2 siung
  • Kemiri 5 butir
  • Daun bawang
  • Tomat
  • Kol secukupnya

Bahan untuk olahan bumbu saus kacang :

  • Kacang goreng 150 gram
  • Cabe rawit 2 buah
  • Cabe merah 3 buah
  • Kemiri 4 butir
  • Kencur secukupnya

Pertama adalah kita harus merebus mie lidi terlebih dahulu, berikut ini adalah cara merebus mie :

  • Panaskan air di panci
  • ⁠Masukkan semua mie lidi
  • ⁠Tuang minyak makan secukupnya agar mie nya tidak lengket
  • ⁠Tutup dan diamkan hingga mendidih
  • ⁠Setelah mendidih dan mie nya empuk angkat dan tiriskan

Cara membuat bumbu saus kacang :

  • Goreng semua perbumbuan : kacang tanah, kemiri, cabe merah dan kencur
  • ⁠Setelah matang angkat dan tiriskan
  • ⁠Beri air secukupnya dan blender
  • ⁠Setelah halus bertekstur tumiskan
  • ⁠Beri sezening : garam 1 sdt, gula 1 sdt, kecap manis 1 sdm, penyedap rasa secukupnya
  • ⁠Sedikit perasan jeruk nipis
  • ⁠Masak hingga mendidih dan airnya agak mengering.

Cara tumis mie :

  • Siapkan wajan di kompor
  • ⁠Beri minyak goreng secukupnya
  • ⁠Tumis bumbu yg sudah dihaluskan
  • ⁠Masukkan sayur kol, kemudian tutup sebentar
  • ⁠Tambahkan garam 2 sdt, gula 1 sdt, penyedap rasa secukupnya
  • ⁠Setelah sayur kol agak layu masukkan mie yang sudah direbus
  • ⁠Masukkan potongan daun bawang dan tomat
  • ⁠Aduk hingga rata dan bumbu meresap

Setelah semuanya siap, mie lidi bumbu saus kacang siap untuk disantap, tekstur mie yang kenyal dengan campuran bumbu mie aceh dan juga saus kacang ini sangat lezat. Perpaduan rasa kenyal, padat dan sedikit pedas dengan lemak dan gurih dari bumbu saus kacang.
