Crispy Fried Canned Fish Salad (Thai-Style Yum Pla Kra Pong)

  • Hi everyone! Today, I'm cooking a simple yet delicious dish using canned fish (sardines in tomato sauce). I'll add some crunch by coating the fish with flour and deep-frying it until golden brown. Then, I'll mix the remaining tomato sauce with some spices and herbs to create a flavorful "yum" sauce. The great thing about this recipe is that it's easy to follow, and you can customize the seasonings to suit your taste buds. Give it a try and enjoy!


Ingredients


  • Canned Fish (Sardines in Tomato Sauce)
  • Crispy Frying Flour
  • Lime Juice
  • Lemongrass
  • Fresh Chilies
  • Culantro (Long Coriander / Sawtooth Coriander)
  • Shallots
  • Fish Sauce
  • Oil for Frying


Instructions


  • Pour the sardines in tomato sauce into a bowl.

  • Take only the fish pieces and coat them thoroughly with the crispy frying flour.

  • Fry the coated fish pieces in hot oil over medium heat until they turn a golden-brown color. Then, set them aside on a rack or paper towel to drain excess oil.



  • For the dressing, I will season the leftover tomato sauce from the can. Add the chopped herbs (sliced culantro, sliced lemongrass, sliced shallots, and sliced fresh chilies.)

  • Add fish sauce and lime juice to the sauce and herb mixture.

  • Mix everything well so the herbs incorporate into the tomato sauce. Taste the dressing; I should get the classic Thai "Yum" flavors: spicy, sour, salty, with a slight sweetness from the tomato sauce (so I don't add any extra sugar).



  • Place the fried fish I set aside earlier onto a serving plate.

  • Spoon the prepared spicy salad dressing over the fish.



  • That's it! I now have a Crispy Fried Canned Fish Salad, Thai-style, ready to be enjoyed with hot steamed rice.
  • The deliciousness of this dish lies in the perfect balance of textures and flavors, making every bite a delight. The crispy fried canned fish, coated with a crunchy batter, provides a satisfying crunch on the outside and tender flesh on the inside.

That looks mouth watering! I haven't thought there's more recipe to make from a sardines. Here in the Philippines although not true for every Filipinos, we love to eat the sardines as it is. Just add some spicy vinegar or soy sauce and it's all good to eat. Some would like it sauteed with garlic and onions and it's already good. Yours looks like a sophisticated dish made from sardines! You're really good at cooking. Very artistic!
