
Foodies, today I’m going to show you how to make a savory dish that’s a favorite among many people: a purple eggplant dish. Eggplant has always been a favorite ingredient that can be transformed into a variety of delicious dishes, whether for family gatherings or everyday meals at home. Of course, purple eggplant dishes are always spicy—I’ve prepared them in many ways, from baking and frying to steaming. But this time, we’ll be combining the eggplant with delicious Medan anchovies.

Purple eggplant is always my go-to for family lunch menus; this time, it’s a combination of stir-fried purple eggplant with Medan anchovies. I specifically chose Medan anchovies because, in addition to their delicious flavor, they become incredibly crispy when fried and aren’t too salty. The anchovies I use are dried; while they’re quite affordable, they’re still somewhat more expensive than other types of anchovies.
Ingredients

20 grams of Medan anchovies
1 tomato
Small green tomatoes (optional)
7 cloves of red onion
2 cloves of garlic
¼ teaspoon of salt
8 “devil’s” chili peppers
Instructions
Prepare all the eggplant ingredients, remove some of the skin, then cut them into small cubes—not too large—so they cook well when stir-fried.


Next, fry the Medan anchovies in a little oil until golden brown or crispy.


Then, cut the red onions in half and mince the garlic, then sauté them in a little oil.


Add the chili peppers and green tomatoes, then season with salt and add the eggplant.


Stir until well combined and cook until the eggplant wilts. Add the tomatoes and eggplant let the eggplant cook until fully tender. Finally, add the fried Medan anchovies. Don’t forget to adjust the seasoning to taste, then serve.




Result

Serve the stir-fried eggplant with anchovies on a serving plate, and enjoy it with hot, steaming rice. It tastes absolutely delicious—savory with a hint of saltiness—but it’s especially delicious when enjoyed with warm rice, especially when you add some chopped spicy chili peppers—uhh, it’s even more delicious.
