Rice Noodle Soup with Skipjack Tuna

Soup has always been my go-to when I’m hungry—yeah, lately I’ve really been into soupy dishes. In my opinion, soupy dishes are much quicker to prepare. And they taste so good, especially when enjoyed on a rainy day like this—it’s absolutely perfect.

So this time, I’m going to show you how to make one of my go-to soups at home. This soup can replace the instant noodles I’ve had to avoid lately. I’m so happy to be able to make a delicious, healthy soup at home, of course using simple ingredients. Skipjack tuna is a rich source of protein and more affordable at the market; in my opinion, when combined into a soup, it becomes a super luxurious dish. There’s a special step involved, of course: briefly stir-frying the fish to remove the fishy smell.

Recipe For one large serving, But This bowl of noodle soup is enough for two people





Ingredients

20 grams of rice noodles
50 grams of Skipjack tuna
1 egg
10 grams of bean sprouts
20 grams of cabbage
1 stalk of celery
1 stalk of green onion
1 tomato
1 clove of shallot
1 clove of garlic




Preparation Instructions


Fry the eggs until cooked through, then set aside to use as a topping. Mince the garlic and shallots, then sauté them in enough cooking oil until fragrant.

Add the skipjack tuna and stir-fry until the fish is evenly cooked and has a beautiful color.

Chop the tomatoes into small pieces to your liking, then bring about 500 ml of water to a boil, and add all the thoroughly washed vegetables.

Boil until tender, then add the glass noodles and the sautéed skipjack tuna from earlier.

Next, add the tomatoes and celery; don’t forget to season with salt and a little mushroom broth if desired.
