Fried Wet Anchovies with Crispy Flour

Peyek is a quick meal at home, especially when I turn anchovies into a set menu to pack for my husband's lunch at work. I never imagined that this quick meal would become my husband's favorite. That's why I often stock up on anchovies or wet anchovies. They are very quick to prepare and, of course, very tasty. The texture is very similar to chips when fried crispy, but when fried medium like this, it resembles a soft pancake. However, it's a savory pancake with a flavor I love.

As a lover of small fish, I often cook my favorite dishes with this fish. However, frying it like this will make you eat a lot of rice. Are you curious about the process of making it? Let's take a look at the step-by-step preparation.




Ingredients Needed

300 grams of wet anchovies
100 grams of wheat flour
50 grams of cornstarch
2 lime leaves
2 cloves of shallots
1 clove of garlic
½ teaspoon of salt
¼ teaspoon of mushroom broth




Procedure


Marinate the wet anchovies with salt and lime juice for a moment, then set aside. Roughly chop the shallots and garlic, then add them to the fish.

Add the lime leaves, then add the wheat flour and cornstarch.

Add water little by little while stirring until the batter thickens perfectly.

Then fry the batter, taking one spoonful at a time in hot oil until golden brown and crispy.

Look at the result, it's perfect to enjoy while warm with super crispy flour and soft wet anchovy texture inside. I was skeptical at first, but trust me, this is a super dish that will whet your appetite. Especially when enjoyed with chicken soup, this super crispy fried anchovy dish is very delicious.

The flavor is savory and not spicy, as it's intentionally made mild for children. No chili or pepper is added, but if you prefer it spicy, you can add sauce or any seasoning of your choice.
