My Lunch: Lentil Soup with Potatoes, Chicken Milanese, and Lemonade

Good evening, dear friends of the @hivefood community. It’s a pleasure to greet you all. I hope you’re all in good health and have a wonderful weekend. Welcome to my blog.

16.jpg

Today, just like every day, I’m stopping by this wonderful community where I feel so at home to share with you what I had for lunch today with my family. I’d like to tell you that I prepared a very traditional, 100% homemade, and very well-rounded meal that’s packed with an excellent variety of nutrients.

14.jpg

This delicious meal is packed with protein and includes chicken milanesa and lentil soup. Lentils are a type of legume that can replace the protein found in meat; they provide fiber, plant-based protein, and complex carbohydrates that deliver long-lasting energy. The chicken milanesa offers lean animal protein, which is ideal for our muscles and tissues.

Now I’ll list the ingredients and walk you through the step-by-step process for this recipe.

Ingredients

  • 4 chicken cutlets
  • Worcestershire sauce and soy sauce
  • 6 small garlic cloves
  • 3 sweet peppers (two for the lentils and one for the chicken cutlets)
  • 1 tablespoon whole oregano, salt, and pepper to taste
  • leek and celery
  • oil for frying
  • 400 grams of lentils
  • medium potatoes

Preparation

The first thing I did was place the lentils in the pressure cooker with enough water; I let them cook for 45 minutes, turned off the heat, checked them, and added all the finely chopped vegetables, salt, garlic, and the potatoes cut into very small cubes. I covered the pot and let it cook without pressure for 25 minutes. The lentils turned out quite thick and became a soup—super delicious.

At the same time, I seasoned the chicken cutlets. I added a little water to a skillet, placed it on the stove, let it come to a boil, and then added the 4 chicken cutlets, turning them occasionally until the water had reduced. I then added a little oil and let them sauté for 5 minutes before plating.

To finish, I made some lemonade with crushed ice in the blender—it turned out like a slushie, super refreshing and delicious.

I’ll mention that I served this dish with white rice, and the whole thing was finger-licking good.

That’s all for now—see you in my next post! Best wishes and blessings to everyone.
