I'm stopping by to share my entry for the weekly contest hosted by the @qurator team, Qurator's: Hive Top Chef! | Colorful, this week we're invited to prepare a colorful dish. I loved that idea, and I decided to make colorful, healthy pancakes. I added color with vegetables like beets, carrots, and spinach. These pancakes are my little daughter Micaela's favorite, but this time I presented them to her in color, and I confess that she loved them. She liked the carrot ones the most. It's a very practical, super easy, and healthy recipe. Let's begin with the step-by-step instructions.
Colorful Pancakes.

Ingredients:

One beet, one carrot, and spinach, approximately 50 grams (this will depend on the quantity you want to prepare).
1 cup of gluten-free oat flour. You can also use wheat flour.
Vanilla extract to taste.
1 egg.
1 cup of milk.
2 tablespoons of brown sugar, or any other sweetener.
The juice of one lemon.
Half a teaspoon of salt.
Half a teaspoon of ground cinnamon.
Half a teaspoon of baking powder.
Oil for making the pancakes.
Preparation:
- First, we're going to add the lemon juice to the milk to make buttermilk. Mix it and let it sit for about 10 minutes. You'll notice the milk curdles, and that's what we want. This buttermilk makes the pancakes fluffier.

- After that time, in a bowl, add the oat flour, salt, cinnamon, baking powder, and sugar, and mix everything well.



- Next, add the egg and milk, and mix very well with a whisk until you obtain a batter. Set aside.


4- Next, we're going to prepare a puree with each of the vegetables. First, add the spinach to a food processor and process it with a little olive oil (or whatever oil you have at home). Set it aside. Then, chop the beet and carrot into pieces and blend them in the... Blend separately in a blender, adding a little water if necessary to form a puree.



5- Once the purees are ready, mix them with the dough you made at the beginning. Divide the dough into three parts: add the beetroot to the first and mix well, add the carrot to the second, and add the spinach to the third.




6- Once we have the batter for the colorful pancakes, we'll prepare them. In a preheated skillet with a little oil, add the batter. First, make the beet pancakes, then the carrot pancakes, and finally the spinach pancakes. Cook thoroughly on both sides until golden brown.



7- Our pancakes are ready! We can serve and enjoy the flavor of each one. Each pancake has its own unique taste. I prefer the beet pancake. I added honey and some fruit for decoration, but that's optional. What I can assure you is that these pancakes are different. and wonderful.
