Hello my friends, I hope you are all doing well, and that you're starting this week with a strong desire to continue fighting for your dreams. Today I want to share the recipe for a dessert typical of my country: Venezuela. I'm talking about some delicious Coconut Kisses. This is the typical name, but you can also call them coconut cookies with brown sugar or panela. This recipe has an emotional meaning for me, since it's my grandmother's recipe. When I was a child, I used to watch her prepare them. They were my favorites. Well, now I try to make them myself. It's impossible not to remember my beloved grandmother and all the times she spoiled me with her delicious dishes. This dessert combines the delicious flavor of coconut with brown sugar or panela and spices like cinnamon and cloves. Without a doubt, the result is exquisite. Let's take a step-by-step guide.

Delicious Coconut Kisses, a typical dessert Venezuelan.


Ingredients:

  • 2 coconuts, or two cups of shredded dried coconut.

  • 500 g all-purpose flour.

  • 500 g brown sugar, or panela. I used 250 g of whole brown sugar, and 250 g of granulated brown sugar.

  • 1 teaspoon of baking soda.

  • 1 teaspoon of baking powder.

  • 2 cinnamon sticks.

  • 1/2 teaspoon of cloves.

  • 1/2 teaspoon of sweet anise seeds.

  • 1 cup of water.

  • 1 teaspoon of salt.

  • One cup of diced coconut.(optional)


Preparation:

1- In a saucepan, add the sweet anise seeds, cloves, brown sugar, and water. Cook over medium heat for approximately 20 minutes, or until the brown sugar is completely dissolved.

2- While we're dissolving the brown sugar, cut the coconuts, remove the flesh, peel, and grate the coconut using the coarse side of a grater. Set aside.


3- When the papelón is ready, remove it from the heat and immediately add it to the grated coconut, mixing well until well combined.


4- Add the baking powder, salt, and baking soda to the flour and mix. Then, add the flour to the coconut and brown sugar mixture. Mix everything well until you get a dough. Finally, add the diced coconut and mix again.


5- Once our dough is ready, on a baking sheet lined with parchment paper, shape the coconut kisses or cookies using two spoons, leaving space between them. Bake in a preheated oven for approximately 25 minutes.


6- Once the time has passed, remove from the oven, let it rest, and enjoy this traditional dessert with an irresistible coconut flavor.
