Before we get to the sweetest stuff, let me tell you about water fasting.

I am sure some of you here are familiar with intermittent fasting but have you heard of water fast? Basically you can not consume anything other than liquid. Thankfully, coffee is allowed and so, that’s how I was able to survive through 3 days, no solid food and only water and coffee. I do this at least once a year but lately, I wanted to try it at least once a week. So, kind of on and off. The reason I am doing this is that I’ve been baking lately and to trick my brain that all these are not something to be done out of boredom.

At the same time, I also wonder why some chefs are just so ripped and healthy despite having all these baked goods. So, maybe they are also doing some workout? Beats me but if you’re a baker or a chef with good habits, let me know your secret!

Recently, my cousin was on a vacation and he brought coffee as a gift. The coffee was certainly for me as others got fruit chips and assorted snacks. It’s a robusta coffee and marked as premium with a very fine grind. It’s best for espresso and since I don’t have an espresso machine, I reckon that I have to find a good use for that.

I’ve been thinking of brownies and since that is a very basic part of baking, it’s best to share this coffee baked goods to the world.

These days, brownies have so many variants that we can’t even keep up with. But this recipe is something classic and everyone can make it. However, there are some notes and things that I also learned about brownies that I have on my notes that I love to share.

You can swap the ingredients but with one thing in mind that you understand that each ingredient has its own characteristic. For example, if you use the recipe that skips baking powder, it will make your brownie more fudgier and denser.

These are some of the ingredients that you need to make small batch brownies. Extra note, this recipe is also affordable as I am doing some swaps to the ingredients such as using margarine instead of butter.

Ingredients

2 eggs
100 gr of sugar
50 gr of brown sugar
1 tsp of vanilla extract
65 gr of margarine
5 tbsp of chocolate chip cookies
2 tbsp of fine powder coffee of your choice
5 tbsp of cocoa powder
¼ tsp of baking powder
65 gr flour
A pinch of salt
Sesame seeds (optional) use any toppings you like.

How to’s

  • Melt 65gr of margarine.
  • Add choco chips into the melted margarine.
  • Once the chocolate melts add espresso powder and vanilla extract.
  • In a big mixing bowl, whisk egg and sugar until they combine.
  • Once the wet mixture is properly incorporated, add brown sugar, baking powder, sift the flour and cocoa powder.
  • Mix everything until they are properly combined then transfer to the baking tray.
  • Sprinkle with any toppings of your choice (optional)
  • Bake for 180 C for 20 minutes in electric oven and 30 minutes in a gas oven
  • Rest for 10 minutes
  • Bake again for another 15 minutes
  • Rest for 10 minutes and serve.

There’s one thing I learned about brownies, you can never go wrong with it. Even if the texture is denser and isn't beautifully made,they will taste so heavenly. Afterall, it is sugar and cocoa, and even better if you add coffee to it. So, this is a recipe that everyone even without baking experience can do. And for me, this will be my last flour based menu as not only I am doing water fasting, I am also on a no-flour challenge.

I can tell you as much it is much harder than if someone were to ask me to skip white rice or any rice dish. So, wish me luck in this challenge and once it ends, I’ll tell you more about my experience not eating food for 3 days that I just finished and along this no-flour challenge.

Brownies look great and about a quarter of the cost of the ones I made in my last post! I'd never put coffee in though lol. Thing is, I love to drink coffee, but I hate any food that contains coffee, including cake!

How are you going to manage a no flour fast!!?? I could do the liquid only diet. Melted chocolate and beer for three days sounds good to me!

A no flour fast is tough. I run on noodles, bread, cakes and cookies xD it's my second day and guess what? My mom made fried noodles and even wanting to make some cakes again. But I have to see until it ends, it's hard for sure but my persistence and willpower will get through it all haha.

It's 7:40 am here and with these images I already feel like Brownie.... How badass to have seen this so early ha ha ha ha. My anxiety will start to kill me 😂

Try adding some coffee powder and they'll taste even more delicious. It was tasty as I also added vanilla to it.
