
Hello, how are you? It has been a while since we ate tortang talong, just because people are not craving enough for it, but my mom asked me to cook tortang talong.
Tortang talong is grilled and peeled eggplant that is fried with egg. This is perfect to dip in Bagoong that is cooked with hot oil, and I always see people dip it in ketchup.

- 5 Eggplants
- 2 Egg
- Half Cup Cooking Oil
- 1 tsp. All-in-one Seasoning
- 1 Day Old Rice
- 4 Cloves Garlic

I first grilled the eggplant over direct fire on the stove until the texture was soft, just like in the photo.
And then peel off the skin under running water. If it is still hot, you can cool it down first, but I am impatient, so LOL.
Then I cracked two eggs into a flat plate.
And then beat the egg until well combined.
Then I added a teaspoon of all-in-one seasoning.
Then beat the egg until the seasoning is completely mixed into the egg.
And then I grab the eggplant I grilled and peeled earlier.
And then place it into the mixture, and then I mash it using the fork just to mix the egg into the eggplant.
In a hot pan, I added about half a cup of cooking oil.
And then one by one, I added the eggplant to cook on each side.
I flip the eggplant on the other side.
It should look like this, and then place it onto a clean plate.
Cook the remaining eggplant.
In the same pan, but a clean one, I added just a tablespoon of cooking oil and then added the garlic when it turned golden brown, and then added the one-day-old rice, and then I seasoned it with all-in-one seasoning, just fried it until the rice was hot enough.
