RECIPE: Exquisite carrot cake with cinnamon and coconut (Eng-Esp)

  • Good evening, dear Hivers! I hope you’re all doing great. Here is the appetizing dessert I prepared today for a snack with my family... Let's put on our aprons and make a "delicious carrot cake with cinnamon and coconut".
  • Buenas noches queridos hivers, espero se encuentren genial! A continuación, comparto con ustedes el apetitoso postre que preparé hoy para merendar con mi familia... Pongámonos el delantal para realizar un "delicioso pastel de zanahoria con canela y coco".

PREPARATION/PREPARACIÓN

  • Place 4 eggs in a bowl and beat at high speed until they become frothy and double in volume. Add 1/4 cup of sunflower oil, 2 tablespoons of vanilla extract, and 1/2 cup of brown sugar or powdered sweetener (as needed).
  • Incorporamos en un bowl 4 huevos, batimos a máxima potencia hasta que tomen una textura espumosa y dupliquen su tamaño. Añadimos 1/4 taza de aceite de girasol, 2 cucharadas de esencia de vainilla y 1/2 taza de azúcar morena o edulcorante en polvo (cantidad necesaria).

  • In this step, add 1 cup of wheat flour, 1 teaspoon of baking powder, a pinch of salt, and 1 heaping teaspoon of ground cinnamon (all previously sifted)... Beat at "low" speed until well combined.
  • En este paso, colocamos 1 taza de harina de trigo, 1 cucharadita de polvo de hornear, pizca de sal y 1 cucharadita colmada de canela en polvo (previamente tamizado)... Batimos a velocidad "baja" hasta integrar bien.

  • We add the carrot—grating it on the coarse side... Then we add the shredded coconut; this ingredient will provide a slightly rustic texture that I’m sure you’ll love!
  • Incorporamos la zanahoria, rallamos por el lado grueso... Agregamos el coco rallado, este ingrediente aportará una textura ligeramente rústica que estoy segura amarán!

  • Grease and flour a baking dish, then pour in our delicious mixture. Bake at 180°C for 50 minutes, or until done.
  • Enmantequillamos y enharinamos un envase refractario, colocaos nuestra suculenta mezcla. Horneamos a 180° durante 50 minutos o hasta comprobar que está listo.
