  • Good evening, hivers, I hope you had a wonderful Saturday! This time, I'll explain how to make some "delicious potato, broccoli, carrot and cheese croquettes". You can enjoy them as a side dish to accompany countless dishes or as a snack. Let's put on our aprons to begin our fun process!
  • Buenas noches hivers, espero que hayan pasado un magnífico sábado! En esta ocasión, les explicaré como preparar unas "deliciosas croquetas de patatas, brócoli, zanahoria y queso", pueden disfrutar como guarnición para acompañar infinidad de platillos o como pasapalo... Pongámonos el delantal para empezar nuestro divertido proceso!

  • INGREDIENTS: broccoli, carrot, potatoes, white cheese, eggs, black pepper, cilantro stems, salt and olive oil.
  • INGREDIENTES: brócoli, zanahoria, patatas, queso blanco, huevos, pimienta negra, tallos de cilantro, sal y aceite de oliva.

PREPARATION/PREPARACIÓN

  • The first step is to cook the potatoes, cut into large cubes, along with the carrots. Add 1/2 teaspoon of salt to the cooking water. When they're ready, strain and set aside.
  • El primer paso será cocinar las patatas, cortadas en cubos "grandes" junto con la zanahoria... Agregamos 1/2 cucharadita de sal al agua de cocción. Cuando estén listas colamos y reservamos.

  • We cook our delicious broccoli... When it's ready, we proceed to strain it.
  • Cocinamos nuestro apetitoso brócoli... Cuando esté listo procedemos a colar.

  • Using a fork, mash the broccoli and repeat the same process with the potatoes and carrots. For this recipe, I like the texture of the mashed potatoes to be smooth and lump-free.
  • Con ayuda de un tenedor trituramos el brócoli, realizamos el mismo proceso con las patatas y la zanahoria, para esta receta me gusta que la textura del puré de patatas quede homogéneo y sin grumos.

  • In a bowl, combine the broccoli, mashed potatoes, and egg (mix well). Add the white cheese. For this recipe, I used Palmizulia cheese. This type of cheese has just the right amount of salt and a VERY succulent flavor! Season with pepper and a pinch of salt. Mix until all the ingredients are well combined.
  • Incorporamos en un bowl, el brócoli, el puré de patatas, el huevo (mezclamos bien)... Agregamos el queso blanco, para este receta utilicé queso Palmizulia, este tipo de queso tiene la cantidad adecuada de sal y un sabor MUY suculento! Sazonamos con pimienta y pizca de sal. Mezclamos hasta integrar bien TODOS los ingredientes.

  • We add a touch of olive oil to a non-stick pan, cook our croquettes. I suggest NOT cooking over "high" heat, to prevent them from getting a very dark texture on their crust... When they are golden brown on both sides they will be ready to enjoy!
  • Colocamos un toquesito de aceite de oliva a un sartén antiadherente, cocinamos nuestras croquetas, les sugiero NO cocinar a fuego "alto", para evitar que tomen una textura muy oscura en su corteza... Cuando se doren por ambos lados estarán listas para disfrutar!
