Yeah...it's indeed very difficult to stay away from gluten 😅, especially in baking area.
Otherwise it's probably not very torturing for Indonesian who mostly eat rice as carbs source in main dish instead of bread or pasta 😜.
For fritters fans it's becoming a little problem again, but you're right...cornstarch is a good helper, potato starch is also an option.
BTW...you can also try sweet potatoes and normal potatoes to make cakes.
There's even traditional indonesian cake aka "jajan pasar" which is typically made of potato flour: "Kue Lumpur".
It's very delicious and easy to make. You don't need an oven for that either 😊.

for sweet potatoes, we usually just steam them, for breakfast. but it can be an option for desserts for example for the weekend, combined with chocolate 😊

That's such a great determination for those living in Indonesia LOL.
It's not that hard for me, cos I don't see that much of Fritter-sellers abroad, so I have to make them myself If I want some.
And it's a bit too bothersome to make it too often, as one need to use lots of oil.
I don't like it 😝.
Using air fryer is not a good solution anyway hehe.
Yeaaa, also cooking oil really expensive. So, living healthy is saving money too ehehe
