En medio del aburrimiento de cocinar para mí un domingo y cansado de mi sazón, hoy hice algo distinto para no tener que salir a comer fuera, sobre todo por las lluvias tan intensas que caen sobre mi país, Venezuela. Conociendo el nivel del personaje, decidí cenar algo normalito, pero bajo la supervisión de su receta. Pensé en carne mechada, así que me di un salto rápido al supermercado para comprar lo necesario y hacerla strictly como la concibió el genio de la cocina venezolana: falda de res, cebolla, pimentón y ajo era lo que me faltaba. Como ven, nada del otro mundo.

Sin embargo, al volver me dediqué a medir cada ingrediente en gramos y tazas, respetando cada cocción en minutos exactos para lograr que quedara impecable. Les comento que no era broma: transforma la comida simple en una experiencia gourmet, demostrando que lo refinado no depende de ingredientes caros o importados, sino de cómo se tratan esos ingredientes y el cariño con que se cocine.

No los voy a aburrir con toda la preparación, puesto que la pueden buscar en Google, pero al menos les comparto lo que cambia la sazón por completo:

  • 1 cebolla grande picada en cuadritos finos
  • 1 pimentón rojo picado en cuadritos finos
  • 4 ajíes dulces picaditos (sin semillas)
  • 3 dientes de ajo machacados
  • 3 tomates maduros picaditos (sin piel ni semillas)
  • 1 cucharadita de comino
  • 1 cucharada de salsa inglesa
  • 2 cucharadas de aceite (o manteca de cerdo, como en la fórmula tradicional)
  • Sal y pimienta al gusto
  • ¾ taza del caldo reservado de la cocción de la carne

En definitiva, todo se cocina a fuego lento para crear una base de sabor profunda y balanceada. Los vegetales van en cuadritos muy finos para que se deshagan, respetando los tiempos de cocción lenta y sin tomar atajos, logrando que ningún ingrediente tape al otro.

El resultado fue justo lo esperado: un plato que ceno comúnmente, pero con una sazón completamente distinta, que era exactamente lo que buscaba. Sé que es difícil —si no imposible— cocinar siempre como el maestro, pero les recomiendo con los ojos cerrados que lo hagan de vez en cuando; no se van a arrepentir. Sentirán de primera mano un sabor mucho más complejo, donde cada aliño se aprecia en su justa medida.

In the middle of the boredom of cooking for myself on a Sunday and tired of my own seasoning, today I did something different so I wouldn't have to go out to eat, especially given the heavy rains falling over my country, Venezuela. I remembered Armando Scannone, the man who transformed Venezuelan cuisine by demonstrating that everyday dishes could reach the level of fine dining if prepared with the right technique.

Knowing the stature of this figure, I decided to make a simple dinner, but under the supervision of his recipe. I thought of carne mechada (shredded beef), so I took a quick trip to the supermarket to buy what I needed to make it strictly as the genius of Venezuelan cuisine conceived it: flank steak, onion, bell pepper, and garlic were the missing items. As you can see, nothing out of the ordinary.

  • 1 red bell pepper, finely diced
  • 4 sweet peppers (ají dulce), finely diced (seeded)
  • 3 garlic cloves, crushed
  • 3 ripe tomatoes, finely diced (peeled and seeded)
  • 1 teaspoon cumin
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons oil (or pork lard, as in the traditional formula)
  • Salt and pepper to taste
  • ¾ cup of the reserved beef cooking broth

Ultimately, everything is slow-cooked to build a deep, balanced flavor base. The vegetables are diced very finely so they melt away, respecting the slow cooking times without taking shortcuts, ensuring no single ingredient overpowers the rest.

The result was just as expected: a dish I commonly eat for dinner, but with a completely different seasoning, which was exactly what I was looking for. I know it’s difficult —if not impossible— to always cook like the master, but I wholeheartedly recommend you try it once in a while; you won't regret it. You'll experience firsthand a much more complex flavor, where every seasoning is appreciated in its exact measure.
