Bitter leaf is one soup I don't glance at twice except it's prepared with ogbono and egusi. Since this came as a special request, i just had to give in. When someone who doesn't consider swallow as food is requesting for a particular soup say she wants to eat swallow i just had to dance through the offer just the way she'll like
Ingredients for the soup
- 1kg protein (beef)
- 200g of stock fish
- 300g egusi
- 250g of crayfish
- 100g thickener (ofor) optional
- 50ml oil palm
- 1tbspoon of pepper
- 1tbspoon of pepper
- 300g of bitter leaf

Step one
Wash and season the beef very well with pepper, salt and other seasoning you want to make use of, just make sure it's not over seasoned as the stock water will be used for doing the cooking. Put it on fire and move to the next step.
Step two
As i allow the meat to the tendency i will like, i wash the stockfish add to it, allow it to cook and i introduced my oil. Soak my bitter leaf in water because it's dry and proceed to blending my crayfish, egusi and thickener.
Step three
I was done with blending and went back to check what's on fire, It's done so i will be introducing my ingredients one after the other. First, i started with the egusi, next was the thickener, then crayfish, salt and pepper. I stir well and allow it cook.
After about fifteen minutes i went back to check it was just the way i wanted it. Then i added my bitter leaf cover and allow it simmer well for few minutes. Then bring it down. That's it the soup is done.
Our soup is ready to be served with any kind of swallow, be it garri, oat, semovita or any other. Bitter leaf is a good medicine for the stomach. For pain and reduces glucose in blood. It's a very healthy soup known among the Southern Easterners
