Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Rice Is the Star. This week's Star is rice, an ingredient that goes with everything. It's used as a side dish and as part of a delicious meal, such as seafood paella. To participate in this week's contest, I wanted to do something different, so I asked myself, “What if this star of the kitchen wraps around the rice to encase some delicious shrimp?.”


The idea was to break out of the routine and not make chicken and rice or paella, even though they’re my favorite dishes. So I bought some shrimp at the supermarket that were pretty big and fresh. You can use leftover rice from the day before so nothing goes to waste and to give it a different twist. Personally, I loved the result—it’s not a family recipe or anything like that; I just came up with this dish on the spot using this seafood that I love.

The recipe is simple and quick to make. After shaping the rice balls stuffed with shrimp, I coated them in flour, egg, and breadcrumbs. These rice balls have a secret, so be sure to check out this recipe.

Ingredients


- 150 grams of zucchini
- 3/4 cup cooked white rice
- 5 peeled and deveined shrimp
- 1 teaspoon extra virgin olive oil
- Shredded cheese, to taste
- 1 egg
- Wheat flour, as needed
- Breadcrumbs, as needed
- Oil for frying, as needed
- Salt and pepper to taste

Preparation


1.- Season the shrimp with salt and pepper to taste and sauté them in a skillet with olive oil over medium-low heat until they turn pink on both sides. This process is very quick; the shrimp shouldn't be overcooked, as they'll become rubbery.

2.- Beat the egg and season it with salt and pepper to taste.

3.- Preheat the skillet and shape the rice balls. Take a handful of rice, place a shrimp in the center, and close it up. Continue this process with the rest of the rice; you’ll end up with 5 rice balls in total. Some of the rice balls contain a piece of cheese in addition to the shrimp.

4.- Coat the rice balls in breading by dipping them in wheat flour, egg, and breadcrumbs, in that order. Fry them until they are golden brown on all sides. Then place them on paper towels.

They turned out delicious—perfect for eating on their own, with parsley sauce, or mashed potatoes. Which do you prefer?.
