


Hello, friends, food lovers, and community greetings! posting one simple recipe that I tried with coconut milk powder that I found in an international Sri Lankan shop.

How to Use Coconut Milk Powder

Take an appropriate amount of coconut milk powder (I used 3 tablespoons) and add warm water to achieve your desired thickness.

Ingredients for the Recipe:
1 cup cooked chickpeas
2 medium onions
5-6 broccolini stems
1 tablespoon oil
3 teaspoons coconut milk powder
1 tomato
1/2 lime
Spices:
1 teaspoon ginger-garlic paste
1 teaspoon garam masala
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric
1star anis
2 cm cinnamon bark
2 bay leaves
Instructions:

Chop the onions and crush the tomato. Prepare the coconut milk and set it aside.

Heat a pan and add the cooking oil. Once the oil is hot, add 1 star anise, a 2 cm piece of cinnamon bark, and 2 bay leaves.
Add the chopped onion and ginger-garlic paste to the pan. Stir well until the onions turn golden brown.

Add the crushed or chopped tomato and stir well.
Add all the spices listed above and mix well.

Stir the mixture until the oil starts to separate. Add cooked chickpeas
Incorporate the cooked chickpeas into the mixture, and add 2-3 tbsp water. And cook until they are well coated with the masala.

Add the prepared coconut milk and stir well. At this point, you can add more water if you prefer a thinner gravy.

Finally, add the broccolini stems and cook for about 3-4 minutes. If desired, sprinkle with chopped coriander.


The Chana gravy is now ready with a different but delicious taste. Enjoy it with chapatis, rice, or pita bread.
