Today i would like to share the recipe of Sukhi Arbi ki Sabji Or Dry Taro Root Curry Arbi is also known as Ghuiya it is a crispy, spiced North Indian side dish which is served with Paratha or Roti, or Additional dish in your Meal. It is made by boiled Taro roots and pan-frying with aromatic & flavourful Everyday Indian Spices. It has a unique and strong flavour of itself and generally cooked with ajwain or carrom seeds, it is not at all liked by kids or many of us, but Those who eat it, it is their favorite Side dish. Taro Roots has Many essential fiber, potassium, and vitamins C and E. you will easily find this taro root at your grocery market,You should try this vegetable dish; you will really like it.

Ingredients 📃


• 4 tbsp of Oil.
• 250 Grams of Boiled Taro Roots.
• 1 tbsp Carom seeds.
​• Pinch of Asafoetida (Hing).
• 2 tbsp of Coriander powder.
​• 1 tbsp of Red chili powder.
​• 1 tbsp Dry mango powder.
• 1/2 tbsp of ​Garam masala

Wash the taro root (Arbi) thoroughly because it has a lot of mud stuck to it, then pressure cook it for 6 to 7 whistles. I already had boiled taro root (arbi/ghuiya), so I just peeled and Slicely cut it.

Heat 1.5 tablespoon oil in a pan. Once oil is hot, add Carrom seeds & Pinch of asafoetida, when it starts sizzling then add Garam Flour.

Now, turn down the heat to low and roast the gram flour (besan) until it turns slightly reddish and becomes aromatic. Keep stirring this because there are high chances of it burning

Now, add the taro root (arbi) that you had chopped.

Now add the spices to this: coriander, garam masala, and red chili powder & Salt.

Now add dry mango powder (amchur) to this; be sure to add it, as it makes your Arbi delicious.

Stir gently so that your spices blend and roast perfectly with the Arbi

Now saute it on high heat until it becomes crispy from the bottom.

Your taro root (arbi) is ready to serve, you can paired it with dal-chawel or your favorite Indian bread - Roti or Paratha.
