Today i would like to share the recipe of Mix Veg in which all the vegetables of your choice as coated with indian spices,the aromatic & flavourful spices of india make it delicious, it is easy to prepared simply chopped the veggies then cooked them into spices untill it get soft, it is served with Breads like Roti or prarthan, can be used as side dish in your meal. Has it comtains lots of vegetables it is healthy, liked by all, especially me 😛 It is also a pretty straightforward recipe that doesn't include fancy ingredients or any specific spices and even it is one pan recipe, no extra utensils is required 😛 Try this recipe, 'm sure you gonna love it.

Ingredients📃
• 1 Dice Onion.
• 1 Chopped Tomato.
• 4-5 cloves of Garlic.
• 1 Diced Carrot.
• ½ Diced Capsicum.
• ¼ Cup of Sweet Corns.
• 1 Dices potatoes.
• ½ Diced Cauliflower.
• 4 tbsp of Oil.
• 1 tbsp of Cumin seeds.
• Pinch of asafoetida.
• 1 tbsp of turmeric powder.
• ½ tbsp of Red Chilli Powder.
• ½ tbsp of Garam Masala.
• Green coriander leaves for Garnish.
• Salt to taste.
Process 👨🏻🍳
Firstly Dices onion, Chopped Tomato and garlic. Keep it aside.
Wash the carrot, capsicum and cauliflower to remove the dirts.
Heat the cooking oil in the kadai/pan, add the cumin seeds & Asafoetida.
now add the sliced onions, saute it on medium flame untill it get transculent.
In the oil, toast the other vegetables - carrot, capsicum and sweet corns,to give it crunchy flavour, saute it untill it get soft.
now add the chopped Tomato & salt, cooked it untill it soft and get mashed with other vegetables.
now add the spices one after the another on low flame, be careful to prevent the burning of spices. Saute it untill it aromatic.
now add the diced potato & cauliflower. Mix it gently so that spices get well coated with veggies.
cover it with lead, on low flame cooked it untill veggies get soft.
Stir it in between to avoid sticking from the bottom.
Your hot delicious Mix veg is ready to serve, pair it up Indian bread like roti or Paratha, even can be served as side dish in your meal.
