Today i would like to share the recipe of Ghobi Aloo ki Sabzi(Cauliflower & potato Dry Curry) It is simple, quick and easy dry curry recipe made with a combination of potatoes and cauliflower with magical Indian Spices. There are various way of making this curry but it is quickest and easy recipe. It is common indian household recipe which is served with the Roti or Paratha, or as side dish to your meal. Even it is ideal tiffin recipe too. You can prepared
with thick gravy by adding water into it, but this recipe is a dry version of it.

Ingredients📃
• 4 tbsp oil.
• 15-20 Cauliflower florets(Ghobi).
• 2 Chopped potato(aloo).
• 1 Chopped Carrot(Gajar).
• 1 Chopped Onion.
• 3-4 cloves of Garlic.
• 1 Chopped tomato.
• 1 tbsp cumin Seeds.
• 1 tbsp kasuri methi.
• ¼ tbsp turmeric Powder.
• ½ tbsp kashmiri red chilli powder.
• ½ tbsp coriander powder.
• ¼ tbsp garam masala
• Green Coriander leaves for Garnish.
• Salt to Taste.
Process 👨🏻🍳

Wash the veggies carefully to remove the dirt & Bacteria. Chopped it as shown in the picture.


firstly, in a large kadai, heat any Cooking oil, I prefer to cook in Mustard oil which is good For Health. you can choose any Cooking oil.

Add cumin seeds & Asafoetida, wait untill it start sputtering. Now add the chopped Onions & Garlic. Saute it untill it get translucent.

Now Fry the ghobi, potato & Carrot on low flame, untill it get light brown in color.

Now add the chopped tomato, tomato as tendency to release water, saute until tomatoes turn soft and mushy.
So don't add Tomato along with ghobi potato then it will not get fry.

keeping the flame on low add turmeric Powder, chilli powder, coriander powder, and salt,saute on low flame, until the spices turn aromatic.

Mix it well, without breaking them. So that spices get well coated with veggies.

Keep the flame low, Cover it with plate, cook it untill it get soft.

Once your ghobi & potato are well cooked then add Kathuri Methi and Garam masala.

Mix it well for a minute.

Serve the Hot Ghobi Aloo with Roti or Paratha, can be serve as a side dish to your meal.
